Spicy Southern Coleslaw

This is a coleslaw recipe I came up with to go with some pulled pork sliders I made. :) I'm not a huge fan of coleslaw, but the boy is and it got the seal of approval so here it is for all the internets to see.

Feel free to shred your own cabbage - my food processor broke, so I took the lazy route and got a bagged coleslaw mix.

Ingredients:
  • 1 bag coleslaw salad mix (or one shredded head cabbage, or a mix of cabbages, onions and carrots)
  • 1 cup mayo
  • 1 1/2 tablespoons vinegar
  • 1 tablespoon water
  • 1 tablespoon sugar
  • 1/4-1/2 tsp Tony's seasoning (Creole seasoning - spicy and salty!)
  • black pepper to taste
  • a few good pinches of celery seed
Directions:
  1. Mix together all the dressing ingredients in a small bowl until they're nice and smooth. At this point it's good to taste and see if you'd like to fiddle with it a bit.
  2. Pour over cabbage mix and mix like crazy until everything is nicely coated!
  3. Chill! Overnight for best results, but a couple hours in the fridge will do, too! It's always better after all the flavors have mixed a bit. :)
Keep in mind that the salt will pull liquid out of the cabbage/carrots/onions/etc, so it will become a little more runny over time. I wanted to keep it more creamy, so I tried to limit the liquid that went in up front. :D
