Zucchini Bread

Greetings! Using an organically grown and garden fresh zucchini in bread is delicious. The more zucchini I grow in the garden means the more bread I can make because it gets eaten rather quickly. Let's make some bread because it's awesome!

Kitchen Hardware Needed

Bread Pan x 2 or 3

Food Chopper

Cutting Board

Bowl x 2

Knife

Measuring Cup

Ingredients

2 cups of zucchini (chopped)

1 teaspoon baking soda

1 teaspoon baking powder

3 cups flour

1 teaspoon salt

3 teaspoons ground cinnamon

3 eggs

4 teaspoons vanilla extract

1 cup vegetable oil

2 cups sugar

Coconut oil spray (any oil works)

Mix baking powder, salt, flour, cinnamon and baking soda together in a bowl.

In another bowl, Whip the eggs, vanilla, sugar oil together. Pour the ingredients from the first bowl into this bowl, mix very well. It takes some muscle and time if your mixing manually, but don't give up.

Cut up the zucchini with the knife in smaller pieces and use the food chopper to chop up quickly. Dump the zucchini in the batter and mix again.

Pour Batter Into Bread Pans

Grease the pans and pour the batter into them. Bake at 325 degrees for 55 - 60 minutes.

Let the bread cool down, cut it up and enjoy!
