Whole Wheat Pretzels
With yeasty water, this creates soft pretzels. However, if you subs the water with yeast milk, pretzels would be much softer and yummier :) Either, this is a great whole wheat pretzels!
Method
1 1/2 c water or milk (whole milk 3% would be best!)
1 tsp oil
1 envelope active dry yeast
2 tbsp honey
4 cups whole wheat flour (whole wheat pastry flour also awesome to use!)
1 tsp table salt
1 large egg, beaten
coarse salt
Heat water/milk either using microwave or stove top until lukewarm. Pour in oil, honey and yeast and stir to dissolve. Let stand until foamy, 10-15 mins
Mix flour and salt, make a well in center then pour in yeast mixture. Stir with wooden spoon, then knead until smooth.
Grease a bowl with oil roll dough inside the bowl, coating dough with oil. Let stand until doubled in size, 1 1/2 h
Preheat oven 400 F
Divide dough into about 8 portions and roll each into a long rope. Twist and form into pretzel as shown on pictures.
Place pretzels on a large ungreased baking sheet and brush with beaten egg then sprinkle with coarse salt
Bake for 20 mins

NOTE: I was told if you broil it for a second or two once baked, it would give nice brown color like storebought ones!
