Waffle Ice Cream Sandwiches
Ice cream sandwiches are a fun summer treat, but these are extra fun because they're made with waffles and coated in chocolate! Bust these out at a weekend barbecue and make it a party.
Supplies
Waffles (see step 1)
Ice Cream
Chocolate Chips
Sprinkles
Double Boiler
Waffle Iron
Cooling Racks
Make Waffles
Make some waffles.
You can use Bisquick or your favorite recipe. I made two batches. The first was a standard batch. For the second, I added 1/4 cup of cocoa and 4 tbsp. of sugar to make them chocolatey.
Put each waffle on a cooling rack.
When cool, cut the waffle into quarters.
Wrap them up and place the waffles in the freezer overnight.
Scoop Ice Cream
For this step you'll need to run back and forth to the freezer. I pulled out all my ice cream for a photo, but I recommend doing one flavor at a time.
Pull out a few waffles at a time, sandwich a scoop of ice cream in between pairs, and press the top down firmly.
Return the sandwiches to the freezer promptly.
Repeat until you run out of waffles or ice cream.
Wrap and Freeze
Wrap your sandwiches in plastic and freeze overnight.
Add Chocolate
Fill a pot with water and bring to a boil.
Put a glass or metal bowl on top of the boiling water and add chocolate chips.
Stir the chocolate until it's soft and smooth.
Spread the melted chocolate onto the straight sides of the waffle sandwiches.
Add sprinkles.
Note: As when you scooped the ice cream, remove only one or two sandwiches from the freezer at a time. Once the chocolate and sprinkles are added, return them to the freezer.
Fast Method
If you don't want to spend days making these, pick up a box of Eggos, and you can scoop your ice cream right away.
While they chill in the freezer for a bit, melt the chocolate.
Apply the chocolate and let cool in the freezer for an hour or so and they're ready to enjoy.
