Rice paper omlette is a pan crisped rice paper brushed with chili oil, filled with egg and choice of toppings; preferably some dried herbs as well. Cooked for a minute or so for a quick and easy 2 minutes tasty breakfast for the whole family.

  • Rice Paper – These amazing sheets are easily available at Asian supermarkets and sometimes you might find them at big supermarkets as well in Asian section. While buying rice papers keep in mind the size of your pan and also choose the varieties that are made with rice mix off rice and tapioca with rice listed first as listing order indicates a higher rice content. Avoid options containing only tapioca as these will likely stick to the pan when cooked.
  • Egg – I like to use large eggs to make them fluffy. Make sure it’s at room temp so it starts cooking quickly.
  • Chili Oil – If you don’t have chili oil to hand, you can also used chili infused oil.

If you have never used rice paper before or have used with problems then the following tips might come t rescue.

  • Rice paper sticking to pan – This is a common problem. Make sure your rice paper is made from rice or a combination of rice and tapioca, not just tapioca. Also, use a dry and clean non-stick pan. It’s ideal to wipe the pan before you cook the next omelette.
  • Egg not setting evenly – Rotating the omelette regularly ensures it gets heat on all sides and you will get properly cooked egg all over.
  • Burning – keep an eye on the bottom surface (lift the edge slightly with a spatula). If it’s browning too quickly, lower the heat a bit.
  • Rice paper not crisping up – It’s crucial to heat up the pan adequately before placing rice paper to it. Also if the heat is too high or too low will make uneven rice paper omlettes. Do not add a lot of toppings as excess moisture on the surface will make the omelette chewy instead of crispy.
  • Toppings not cooking through – Do not put uncooked protein/meat to the omlette. they must be cooked and cut into small pieces/slices.
