Vanilla Meringue Cookies
Vanilla Meringue Cookies are not only good around the holidays, they are good year-round! These cookies are so simple to make, and they only consist of 5 ingredients that you hopefully have on hand. They are crunchy on the outside chewy on the inside (if they are a bit bigger) and they melt in your mouth, once you have a bite of one, you’ll go in for seconds. Supplies
Ingredients
- 4 large egg whites room temperature
- 1/2 teaspoon cream of tartar
- Dash of salt
- 1 cup (200 g) granulated sugar
- 1 teaspoon vanilla extract or vanilla paste
Preheat Oven
Preheat oven to 250 degrees F (130 C) and line baking sheets with parchment paper, set it aside. I also like to wipe my bowl and attachment with vinegar so the egg whites will form. If the dishes are greasy the egg whites won't get fluffy.
Add Egg Whites to Bowl.
To a standing mixer add egg whites, cream of tartar and salt.
Beat
Beat on medium speed until foamy.
Add Sugar
Gradually add sugar, 1 tablespoon at a time until sugar is dissolved. Continue beating until stiff glossy peaks form, about 7 minutes.
Add Vanilla
Add in vanilla extract or paste and beat. Meringue should be stiff by this point.
Pipe Meringue
Transfer meringue to bag and pipe onto prepared cookie sheet.
Bake
Bake 45-50 minutes or until firm to the touch. Turn off oven; leave meringues in oven 1 hour (leave oven door closed). Remove from oven; cool completely on baking sheets. Remove meringues from paper; store in an airtight container at room temperature.
