Carrot - Vampire Cup Cake
Cup cakes are desserts.They are sweet and really cute, decorated with icing.Here is my unique vampire cup cake made out of carrot icing.amazing. It looks reall cake icing!!
Ingredients
For cup cake
1 cup all purpose flour
1 cup granulated sugar
1 tea spoon ground cinnamon
1 Tea spoon baking soda
2 Eggs
2 cups freshly sherred carrots ** (Approx 1/2 lb)
1/4 cup chopped nuts.
12 Vampire cups
** Do not use pree shredded carrots
** If you like you can use a little more nuts
Can make 12 medium size cup cakes.
For decoration.
Few carrots
Icing sugar
little bit corn flour (forgot to include in the photo)
Vampire sticks

Set the Oven
Pree heat oven to 180°C
Line standard muffin pan with baking cups.I choosed a nice Halloween theme paper cups as my kinder garten kids like Halloween.
In medium bowl combine flour ,sugar,cinnamon and baking soda.Mix well.

In a large bowl beat eggs with an electric mixer until foamy,
Add oil in a thin stream and beat well.,
Now add flour mixture to egg mixture and mix well.
Fold in freshly sheredded carrots and chopped nuts
Spoon In..
Spoon in to baking cups.
Baking
Bake 18-20 minutes or until thooth prick inserted in center comes out clean,cool cup cakes in pan on cooling rack for 5-8 minutes.Remove cup cakes from pan cool completely to room temprature.
Prepare Carrot Icing
Peel and chopp the carrots.Boil them well.Use your hand mixer and make it to a paste.Use only the carrots and throw away the boiled water.
Carrot Paste
This paste is like baby food,very well smashed up.which can pass through an icing nozzle.Since it is a bit light in consistency I added a little bit icing sugar,and diluted corn flour. Then I cooked it until it became a little bit thick in consistency.
There is no special measurement for this,you can try it out according to your own mesurement.

Icing
Using a star nozzle pipe a spiral of icing,biginning at the outer edge working inwards.Pipe a second spiral on top,end spiral at center
Vampire
Insert the vampire stick. in the middle.The cup cake is really tasty.Go ahead and try it out.
