Tropical Shrimp, Fruits & Veggies Dish
This dish is easy to make but on top of that, it is healthy and DELICIOUS!
This pumpkin, chickpea, shrimp & veggies dish is a real crowd-pleaser in the summertime because it contains a lot of colors and it leaves you satisfied because of the special and amazing taste.
Below I will explain how to make this incredible recipe.
Supplies
Recipe for Two:
First of all you are going to need 8 ingrediënts. You will need:
- 400 gr of Pumpkin
- 4 Table Spoons of Chickpeas
- 100 gr of Feta
- 100 gr of Shrimps
- 1 Onion
- 1/2 Lemon
- 1 Table Spoon of Sunflower Seeds
- 1/2 Pomegranate
- 1 Avocado
- Olive oil
Spices:
- Black pepper
- Garlic powder
- Ras Al Hanout
- Rosemary
- Nutmeg
- Tabasco
- Oyster sauce
Prep the Veggies & Fruits
You want to start off by cutting your vegetables and fruits. That will make the process easier when cooking. First of all the pumpkin I bought was already cut into cubes. If this is not the case then you have to cut them into cubes at this stage.
Cut the lemon into two pieces because you only need half a lemon. You need half a pomegranate so you cut it and pick out the seeds, this can take a while but it is so worth it. You also chop the onion.
Tips and Tricks on Cutting Avocados:
You cut the avocado down the middle and turn the sides against each other to open it up. Remove the seed by sticking a knife in the seeds until it the seed detaches from the avocado. After that, you want to cut it into cubes as you can see on the picture and than you take it out with a spoon.
Heating Up the Pans
This is the second step, in this step you will cook some of the food. I will take you through it step by step.
Put two pans on the stove at the same time (+/- 10 min necessary):
Big pan:
- Put the big pan on a high heat
- Oil up the pan
- Put the pumpkin cubes and chickpeas in this pan
- Add the next spices: garlic powder, pepper, rosemary, nutmeg, and ras el hanout
- Wait until the pumpkin cubes and chickpeas get a little crunchy
- Ready
Small pan:
- Put the small pan on medium heat
- Oil up the pan
- Put the onion in the pan
- After stoving the onions for a little while, put in the shrimp
- Pepper and garlic the shrimp
- Add a little oyster sauce & Tabasco (one or two drops of both)
- Add a splash of milk
- Let it simmer for a little bit
- Ready
The Garnishing
This is step 3, the last step! Almost time to eat!
Above you can see how I garnished my dish. But you can be creative with it as well.
I started off with the chickpeas and pumpkin base then added the shrimp. After that you can crumble or dice the Feta cheese and sprinkle it over the dish. Don't forget those lovely pomegranate seeds, they will color the dish up and give such a great sweetness to it. And last but not least you can add the avocado and the sun flour seeds for a bit of crunchiness.
