Tiramisu Cupcakes
When I found this contest I couldn't think of anything to make, however once I looked into the desserts I discoverd Tiramisu. Being the cupcake baker I am, I looked into a making a Tiramisu Cupcake and I did :) Enjoy!
Cake Ingredients and Baking
Cake Ingredients:
1 cup butter-softened
1 1/2 cups sugar
4 large eggs
3 cups all-purpose white flour
3 tsp. baking powder
1 tsp. salt
1 cup milk
2 tsp. vanilla extract
Paper baking cupcake liners
Vegetable cooking spray
Yield: 24 cupcakes or 2 dozen
Directions:
1. Preheat oven to 350F. Prepare cupcake tins with liners, set aside.
2. Beat butter and sugar at medium speed with an electric mixer until creamy and smooth. Then add eggs, 1 at a time, mixing until well blended after each egg.
3. Combine flour, baking powder, and salt together in a small bowl. Add to butter mixture alternating with milk. You should begin and end with the flour mixture. Mix at low speed until bleneded. Add in vanilla extract.
4. Spoon cake mix into cups, filling 2/3 full.
5. Bake at 350 for 12-15 minutes or until toothpick inserted comes out clean.
6. Cool in pans on wire rack for 10 minutes, remove cupcakes from pans and set on wire racks to completely cool.

1 8oz cream cheese-softened
1/3 cup powdered sugar
2-3 Tbsp. coffee liqueur(Kahlua) or 1 Tbsp. coffee extract
1/8 tsp. salt
Yield 2 Cups
Directions:
1. Combine all ingredients in a medium bowl, mixing until well blended.
Store any remaining filling in container in refrigerator-up to 2 weeks.

Placing the Filling
Once cupcakes are completely cooled, cut tops off of the cupcakes using a serrated knife. Then spread 1 Tbsp. of Tiramisu Filling on the bottom part of the cupcake, gently place the top back on.
Cream Cheese Frosting
Frosting Ingredients:
1/2 cup butter-softened
1 8oz cream cheese-softened
2 16oz packages powdered sugar
1/4 tsp. salt
Yield 5 cups
Directions:
1. Beat butter and cream cheese at medium speed until creamy and smooth.
2. Gradually add in the powdered sugar and salt, mixing at low speed. Beat at high speed for 2 minutes until creamy and thick.
3. Frost each cupcake by using a spatula, knife or piping bag and tip.

Top It Off
For the finishing touch dust/sprinkle with Hersheys Cocoa Powder.
