Delicious Cupcakes - Oreo, Carrot, Peanut Butter!

In this Instructable I will show you how you can bake your very own cupcakes. I will show you my three favorite kinds:
1) Carrot Cupcakes with Cream Cheese Frosting (You can skip to step 1)
2) Vanilla Cupcakes with Peanut Butter Cream Frosting (You can skip to step 10)
and finally...
3) Oreo Cupcakes with Oreo Frosting! (You can skip to step 13)

Here are the ingredients already:

1)

Serves 12

2 Medium eggs
1 Pinch of salt
70 g Sugar
100 g grated almonds
1 tbsp flour
75 g grated carrots
Cupcake Liners
One carrot for decorating

Frosting ingredients

100 g soft butter
150 g cream cheese
150 g powdered sugar

2)

Serves 12

100 g soft butter
150 g sugar
1 tsp vanilla sugar
2 eggs
2 egg yolks
175 g flour
1 tsp baking soda
1 pinch of salt
150 ml buttermilk
Cupcake Liners
Colorful Sugar Sprinkles

Frosting ingredients

1 filled tbsp crunchy or smooth peanut butter
70 g soft butter
75 g sieved powdered sugar
1 tsp vanilla sugar

3)

Serves 12

100 g soft butter
150 g sugar
1 tsp vanilla sugar
2 eggs
2 egg yolks
175 g flour
1 tsp baking soda
1 pinch of salt
150 ml buttermilk
Cupcake Liners
18 Oreo cookies (12 for cupcakes, 6 for decorating)
Frosting ingredients

12 Oreo Cookies (crunched – keep packaging for crunching!)
70 g soft butter
75 g sieved powdered sugar
1 tsp vanilla sugar

Carrot Cupcakes With Cream Cheese Frosting

Gather all of the ingredients and spread them out in front of you.
That way it is so much easier to bake and it is way more fun!

Ingredients:

Serves 12

2 Medium eggs
1 Pinch of salt
70 g Sugar
100 g grated almonds
1 tbsp flour
75 g grated carrots
Cupcake Liners
One carrot for decorating

Frosting ingredients

100 g soft butter
150 g cream cheese
150 g powdered sugar

Prepare & Preheat

Place all cupcake liners into your muffin pan and preheat your oven to 175°C.

Egg White

Separate the eggs, put the egg white into a mixing bowl. Add the salt and mix until very white and fluffy. To find out whether you’ve mixed long enough, turn the mixing bowl and see whether or not the egg white moves. If it does not move, you’re good to go!

Silky and Shiny

Put in the sugar and mix again until silky and shiny, as shown in the picture. Add the eggs as well & mix again.

Eggs & Dry Ingredients

Put the almonds, flour (not shown in picture but you cannot leave that out!) and the carrots inside of the shiny mix and stir. Add the egg yolks.

Baking Time!

Place the cupcakes in the lower third of the oven and bake for about 30 minutes, but I recommend checking after 27 minutes.

Frosting

For the frosting, simply stir all of the ingredients together until you get a smooth mixture. Of course you can stir until there are still little pieces of butter or cream cheese left, which I did.

Frost!

Then frost each cupcake. You can choose whichever piping star you want.

Finish Up...

Finally place a carrot slice on the frosting of each cupcake and you’re done!

Vanilla Cupcakes With Peanut Butter Cream Frosting

These cupcakes are so easy!
All you need to do is mix the sugar, butter and vanilla sugar together.
Then quickly add all of the remaining ingredients and mix until your mixture is nice and soft.
Then you fill your cupcake liners and bake at 175°C for approximately 20 minutes!

Ingredients:

Serves 12

100 g soft butter
150 g sugar
1 tsp vanilla sugar
2 eggs
2 egg yolks
175 g flour
1 tsp baking soda
1 pinch of salt
150 ml buttermilk
Cupcake Liners
Colorful Sugar Sprinkles

Frosting ingredients

1 filled tbsp crunchy or smooth peanut butter
70 g soft butter
75 g sieved powdered sugar
1 tsp vanilla sugar

Frosting

For the frosting you mix all of the ingredients together, but add the peanut butter.
Now frost the cupcakes!
It can be pretty challenging to put the frosting on because of the peanuts, since it’s crunchy peanut butter.
It simply takes a little longer than usually, but it will work out eventually.
(If you want to, you can definitely choose soft and smooth peanut butter.)

Colorful Sugar Sprinkles

Add colorful sprinkles and you’re done, enjoy!

Oreo Cupcakes With Oreo Frosting

For the mixture, do the exact same thing as for the vanilla cupcakes with peanut butter cream frosting.
When you are about to pour the mixture into the cupcake liners (two thirds full also) place an Oreo cookie into each cupcake liner. Then pour the mixture on top of each cookie.
Bake the cupcakes at 175°C for about 20 minutes as well.

Ingredients:

Serves 12

100 g soft butter
150 g sugar
1 tsp vanilla sugar
2 eggs
2 egg yolks
175 g flour
1 tsp baking soda
1 pinch of salt
150 ml buttermilk
Cupcake Liners
18 Oreo cookies (12 for cupcakes, 6 for decorating)
Frosting ingredients

Oreo Frosting

Mix together all of the frosting ingredients and add the crunched packets of oreos (four in each packet). To crunch the packets you can just take a cooking spoon and carefully crunch the cookies. Be careful not to break the package, because you will get Oreo everywhere! Make sure that the Oreo pieces are not too large, because otherwise it will be very hard to frost the cupcakes.

Frost!

Place half an Oreo onto each cupcake and you’re done!
