The Eggiest, Eggless Egg Salad (<1 Minute!)
Now that's a tongue twister! :D

Basically, it's a dream come true for anyone who can't eat eggs but is still longing for the luxury of enjoying a great egg salad.
Plus, it's SUPER fast, being ready in under 1 minute!
What!? Is that even a thing? It is now :)
It's about to get real...
What You'll Need
This recipe is all about taste. So the quantities depend on you and how much you have to prepare. It's really a hard recipe to mess up, though (unlike baking or something more meticulous). Just keep tasting it until it's perfect! :)
INGREDIENTS:
Yellow Mustard
Salt (I like fresh ground sea salt)
Mayo (NOTE: Use your favorite eggless mayo--unless you don't mind the eggs in Hellman's or Miracle Whip, but it may defeat the purpose of this eggless egg salad, LOL. ;) You can also make your own eggless mayo and keep it in a store-bought mayo container.* Or, you can buy store-bought eggless mayo like: Vegenaise, Just Mayo, Spectrum Organic Eggless Canola Mayo, or Nayonaise...with most people suggesting that the taste of Just Mayo is the closest to real mayonnaise.)
Firm Tofu
Onion Powder
If you need a recipe to start you off...here are some "about" measurements:
1-700g package of tofu (about 24 ounces)
1/2 to 1 cup mayo
1/8 to 1/4 cup mustard
1 teaspoon onion powder
1 teaspoon salt
ADJUST YOUR AMOUNTS AS NEEDED, TO TASTE.
Optional extras (per your taste):
Turmeric (has health properties!)
Paprika
Dill weed
Fresh dill, chopped small
Pickles, chopped small
Black pepper
Celery seed
Celery, chopped small
Tomatoes, chopped small
Onions, chopped small
Bell peppers, chopped small
*There are so many different types of homemade eggless mayo options you can try (dependent upon your specific taste buds). Some have dairy and others are vegan. Just Google it to find your favorite recipe!
Mix It All Together
1. Drain the tofu.
NOTE: I know what you might be thinking..."Tofu? Cold? Isn't that gross?" And the honest answer is, No. With this recipe it's delicious! So if you don't like tofu (or don't like it cold), I challenge you to try this...it just might change your opinion ;)
2. Over a medium bowl, crumble the tofu with your hands until it resembles egg pieces.
3. Add mayo, mustard, salt, onion powder, and optional turmeric to taste. Also add any other ingredients you like, as you would use in your traditional egg salad. You will know it's ready when it develops a delicious egg-y taste :)
NOTE: Because it's tofu, it's pretty flavorless. So be sure to keep tasting it so you don't season it too little or too much. But you will need quite a bit of salt and onion powder to give it a really great flavor. A little side note, since we aren't cooking the tofu, the yellow "egg" color will come from the mustard, not the turmeric.
4. Mix it well and spoon it over your bread of choice.
5. ENJOY!
Make this for the Super Bowl, a birthday or other party, at tea time, on the holidays, or as a just-because snack. Mmmm... :D
