Thai Fried Omelette With Dill
Need some GREEN in your diet?
In Thai, dill is called 'pak chee lao', or Lao coriander.
I don't know why.
However, I do know that it's super-delicious in a Thai-style fried omelette and wicked-easy to make.
Ingredients:
1 big bunch of dill
2 tsp seasoned soy sauce
2 tbsp vegetable oil
3 large eggs
How to do it:
1. Chop the dill finely, removing any tough stems.
2. Beat soy sauce, eggs, and dill together to make a nice foamy egg mixture. Whip it - whip it good!
3. Heat oil in a pan until it's almost smoking.
4. Pour in egg mixture and use a fork to continue beating the mixture in the hot oil for about 1 minute.
5. Turn the heat way down and wait.
6. After about 2-3 minutes, lift up an edge to check if it's cooked - when ready, flip it - flip it good!
7. Cook another minute so both sides are golden brown.
Done!
A thorough grinding of black pepper on top is a great idea.
*****Extra step: if you have a lemongrass bush, plate the omelette and show it to the bush. Taunt it, tease it, but don't let that lemongrass have any of your delicious omelette. That's people food!
