Sweet-n-Spicy Onion Burger

Sweet yellow onions, mm, mm, mmm! Cut into small portions, sauteed and mixed with honey, sriracha sauce and mustard, are the secret to this delicious burger. This is a very simple recipe for a delicious, yet uncomplicated burger.

Ingredients

The Burger

1.5 lb Gound beef (80/20 fat ratio)

Formed into 6 1/4lb patties

The Toppings

Sriracha

Yellow onions (sweet)

Honey

Mustard

The Bread

Brioche buns

Honey, Onion, Sriracha, and Mustard

Mix 2 TBSP of sriracha, 1 TBSP yellow mustard, and 1.5 TBSP honey. Set aside until the onions are ready.

Chop the yellow onion place in a small saucepan. Cook on medium heat, stirring constantly with a splash of olive oil. I like to add a small pinch of salt and pepper as well. Saute until translucent and slightly browned. Don't over cook, as burned onions are very bitter.

Pour the cooked onions into the sriracha/honey/mustard mixture and combine well.

-Optional- You can cook this mixture down until is thicker, if you prefer.

The Patties

Season the patties with salt and pepper to taste. Cook in the same skillet, until medium (160 F). Set aside.

Drain grease from pan and toast the bun slightly.

Build your burger with all those delicious ingredients. Or do what my wife did and have it on a bed of spinach.

All in all, this thing is delicious. The tanginess of the mustard with the sweetness of the honey and grilled yellow onion is brought together with the smoky heat of sriracha. It's a trifecta of deliciousness!
