Sweet N Spicy Lemon Preserve
This wonderful Lemon preserve is sweet, spicy, sour, and the tanginess of lemons.-all in one spoonful. Satisfying all the tastebuds.
Easy to make and can be stored for long periods of time to make the availability thru all seasons.
Ingredients
2 large lemons
1 cup (ie 200g) sugar
4-6 tsp salt
1tsp mustard seeds
1tsp vegetable oil
3tsp chilli powder(increase or decrease by your chili tolerance)
1 small stick cinnamon.
Process
cut the lemons into quarters and deseed them.
cut into smaller cubes.
Put the cubes into in a bowl and sprinkle 4tsp salt.
Cover the bowl with a cling wrap and let it stand for an hour or so.
The lemons leave their juices.
Final Steps
In a cooking pan heat 1tsp oil
When he oil is hot toss in the mustard seeds. They begin to splutter.
Immediately reduce the heat to medium.
Add in the cinnamon stick, and the bay leaf.
Pour in the cupful of sugar, the cut lemons with the juice.
Let it simmer.
The sugar melts and the lemon pith and rinds start turning translucent.
Now sprinkle the chills and give a good stir. Let it cook for another minute or so.
Ladle the preserve into sterilized glass jars and screw on the lids very tightly. The process of home canning will give the preserve an even longer life. Store in warm dark spot
Enjoy it fresh or even better after a month of canning..
