Sweet and Spicy Macaroni Salad Recipe

With tons of barbecues lined up, it's the perfect time to bring our Sweet and Spicy Macaroni Salad. This side dish goes well with just about anything for your summer picnic!

Full Ingredients:

  • 3 cups of Elbow Macaroni Noodles
  • 1 and 1/4 cups of Milk
  • 1/2 tsp of Red Pepper
  • 1 1/2 tsp of Salt
  • 1 cup of Mayo
  • 1/2 cup of Red Wine Vinegar
  • 3/4 cups of Granulated Sugar
  • 1 cup of chopped Kosher Dill Pickles
  • 1 cup of chopped Orange Peppers
  • 1 cup of sliced Roasted Bell Peppers
  • 1 cup of chopped Green Onions
  • 1/2 cup of Pickle Juice
  • Handful of sliced Olives
  • 1/2 tsp of Ground Black Pepper

Start out by boiling 3 cups of Elbow Macaroni Noodles.

Every burner is different, but usually when ours start boiling like crazy--the noodles are done. Once you're sure, carefully drain, and run some cold water over them. And then, transfer them to a large enough bowl .

Now add, 11/4 cups of Milk. [ stir ]

Dump in a 1/2 tsp of Red Pepper, and 11/2 tsps of Salt. [ stir ]

For now, only add a 1/2 cup of the Mayo. [ stir ]

Separating the mayo allows for the ingredients to sit together longer and get to know each other :). We'll be adding the additional 1/2 cup later on.

Let's tang it up a bit. Go ahead and dump in a 1/2 cup of Red Wine Vinegar.

And for the sweet taste, about 3/4 cups of Granulated Sugar. [ stir ]

Lets get the vegetables in there. Add, 1 cup of chopped Kosher Dill Pickles, 1 cup of chopped Orange Peppers, 1 cup of sliced Roasted Bell Peppers, and finally 1 cup of chopped Green Onions. [ stir ]

Save some pickle juice!

Once its fully mixed, dump in a 1/2 cup of Pickle Juice. [ stir ]

Almost There :)

Add the additional 1/2 cup of Mayo.

And a handful of sliced Olives.

Last but not least, add a 1/2 tsp of Ground Black Pepper. [ throughly mix well ]

Once your fully done mixing, cover this up and stick this baby in your fridge for at least 4 to 5 hours. When the hours are up, and the macaroni salad is completely cold--make sure to it mix it again once more and enjoy!
