Sunflower Spinach Pie Recipe
This is a very simple recipe, yet extremely tasty and original!
The wow factor of this spinach pie is its shape: with a simple touch you can turn it into a beautiful sunflower.
A great idea to make your kids eat some veggies ;)
Supplies
- 2 round sheets of puff pastry
- 250 gr (1 cup) ricotta cheese
- 300 gr (1.3 cup) spinach
- 1 egg
- 80 gr (a little less than a cup) grated Parmesan cheese
- bread crumbs
- salt and pepper
Prepare the Spinach
Cook all your spinach in boiling water.
Drain it then let it cool down a little. Squeeze it with your hands to remove all of the exceeding water.
Finally, chop it up.
Make the Filling
Put your spinach in a large bowl, add the ricotta cheese to it and mix everything together.
Add the egg, grated Parmesan cheese and adjust with salt and pepper.
Mix well and the filling is done!
Fill Your Pie
Open up one of your puff pastry sheets and lay it on a big baking pan.
I decided to use already made puff pastry because it's much faster and easier, but you can make it yourself if you have time.
Sprinkle some bread crumbs in the middle of the pastry sheet and all around it forming a circle with a ring around it (see pictures). This will absorb the filling's water during the baking.
Add all your filling on top of the bread crumbs leaving some distance from the border.
Finally, place the second puff pastry sheet on top of everything.
Create Your Sunflower
Join the 2 sheets together pressing the borders with a fork. Then press the part around the central circle as well.
Cut the filled ring into many sections. They have to be about 3-4 cm large (1,5'').
Twist each section to one side to form the petals of your sunflower then prick the central part using a toothpick. Make sure to twist all of the petals to the same side!
Bake It!
Bake at 180°C (350°F) for 30 minutes and amaze your family and friends!
