Strawberry Pie Filling

I buy large boxes of strawberries almost every weekend from the farmers market. The guy gives me such a good price, I can resist buying them each time. As a result, I end up making many things from strawberries. This strawberry pie filling recipe is just one option of using the strawberries. It is simple and a good way to preserve strawberries. The ingredients below are listed for canning a 1 quart jar. Increase the recipe to adjust for the number of quart jars you are canning. This recipe can also be found at gardengirlrecipes.com.

Ingredients

3½ cups fresh strawberries, washed

¾ cup + 2 tbsp granulated sugar

5 tablespoons Clear Jel®

1 cup cold water

3½ teaspoons bottled lemon juice

Combine Sugar and Clear Jel

In a large pot, combine the sugar and Clear Jel®.

Add Water

Add the water and cook until the mixture begins to bubble over medium high heat.

Add Lemon Juice

Add the lemon juice and boil for 1 minute, constantly stirring.

Add Strawberries

Add the strawberries and gently fold into the mixture.

Fill Jars and Process in Water Bath

Fill the quart jars with the strawberry mixture, leaving 1½ inch headspace, remove the air bubbles, wipe the rims, add the hot lids/rings, and process in a water bath for 30 minutes at a full rolling boil. Adjust the time for elevation, if needed.
