In South Africa we call a bbq a braai and we make fire from wood and braai on the coals.

This "steak on a plank" is a favourite when there are guests over to be served as a snack.

It is a steak that is braaied till med rare and then served to guests directly from the fire by placing on a plank and cutting to pieces.

Supplies

Wood
Starters
Firelighters
Decent rump or sirloin steak
Jimmy sause
Braai salt

Building a Fire

Pack a sturdy base
Put some starters pieces in between the gaps
Place enough wood so that you will have a decent amount of coals.
Remember, steak needs hot coals to be able to braai it quickly
Light the fire and pour a drini

Cleaning the Braai Grid

To clean the braai grid from previous build-up, put the grid in the fire so that the old build-up can burn off.

After this use a steel brush to scrape off any left over build-up

Coals Are Ready

Once all the wood has burnt to coals it should look something like the attached photo.

For steak you need hot coals, i use kameeldoring wood that gives longlasting very hot coals.

Braaiing the Steak

To braai the steak you put the meat without any spices or sauce on the grid, then place the grid over the coals at a height of about 5 inches above the coals.

You then seal the one side for 1 min and then turn it over and seal the other side for 1 min.

Once it has been sealed you add spices and sauce and then braai it for 2 min on each side.

After this you need to gauge whether the steak is ready, but usually it could go another 1 min on each side.

Once the steak is ready all that is left to do is present and serve.

For this the steak is taken directly from the coals and placed on a wood plank. A little sauce could be added and then it is cut into strips and seved to your guests by sending the plank around.
