Stacked Guacamole Sandwich
This recipe took me back to my childhood when I used to take sandwiches to the field to feed the workers. I would make sandwiches of every kind and bag. However, this year is going to be different, 3 decades later, I am going to bring stacked sandwiches. What a clever idea that I had never thought of as the days are long during harvest and the combines never stop running until the crop is brought in.
A sandwich is usually small, but when stacked is tall. The ‘Stacked Guacamole Sandwich’ is my twist on chicken salad. The pop from the pomegranate and the protein from any type of chicken makes this an inviting inventive sandwich.
Supplies
Ingredients for Stacked Sandwich:
2 cups chicken, cubed
2 medium ripe avocados, peeled and mashed
1 cup pomegranate seeds
6 green onions, chopped
10 cherry tomatoes, halved
1 jalapeño, seeded and diced
1/4 cup fresh cilantro leaves, chopped
3 Tbsp. mayonnaise
2 Tbsp. lime juice
1 garlic clove, minced
1/2 tsp. salt
1/2 tsp. ground cumin
1/4 tsp. pepper
20 slices multigrain bread, toasted
Garnishment: Lettuce Leaves
Serves: 10 Servings
Supplies Needed to Make Stacked Sandwich:
Measuring Cups & Spoons
1 medium bowl
9 small bowls for ingredients
Paring knife
Medium stirring spoon
Cutting Board
Gloves for cutting pepper
Spatula
Toaster
Serving Platter
Add Ingredients for Guacamole Salad
In a large bowl, combine all ingredients, but the bread.
Add chicken, pomegranate seeds, tomatoes, jalapeño, onions and cilantro. Stir all of these ingredients together.
Then, add lime juice, minced garlic, cumin, salt, pepper, mayonnaise and guacamole. Mix all ingredients together.
Make Guacamole Chicken Salad Sandwiches
Spread guacamole chicken salad over number of slices of toasted bread, you wish to serve. Then, top each prepared slice with a toasted slice of bread.
Garnish Stacked Sandwiches and Serve
Add fresh lettuce leaves and on serving platter and place each sandwich on top of the other. Place a wooden sandwich pick in the middle of the sandwich stick. The sandwiches are ready to serve and a real challenge for any one who can eat all four. Instead of batter up, it is stacker up!
