Speedy Pizzas

I hope you are fine and keeping safe.

In this Instructable am going to describe how I have turned sliced and packaged bread into some very tasty mini pizzas. This is a super fast recipe which I am sure your kids (and adults) will appreciate a lot.

Actually you are going to love it too, since it is done in no more than 30 minutes.

I have made four mini pizzas in total, and what I have used is:

  • 4 slices of white bread
  • 1 mozzarella
  • Chopped tomatoes
  • Grilled aubergines

I have used one tin of chopped tomatoes, but tomato sauce would work perfectly too.

In my recipe I have used grilled aubergines just because I love them and I would put them everywhere, but you can substitute them with your preferred topping. It can be any topping, from mushroom to pepperoni, from onion to blue cheese.

If you would like to make some more pizzas, just add more slices of bread and use more than one package of mozzarella.

This recipe is very versatile in terms that can be gluten free if you use gluten free bread or vegetarian depending on the topping you choose. I am afraid is not lactose-free because of the mozzarella, but if you decide to have red pizzas, then.. problem solved :)

Dice Your Mozzarella

The first step consists in cutting the mozzarella in small pieces. I personally like them quite small so they melt more easily in the oven.

Organize the Bread Slices

Preheat the oven to 200°C.

Take an oven tray, line it with a sheet of baking paper and place the four slices of bread there.

First Thing First: Tomato

Before using it, I have squeezed and pressed the chopped tomatoes to get rid of the big chunks. If you use tomato sauce, this step is not necessary.

Spread the middle of the four slices of bread with some tomato sauce. Do not load the bread slices with too much sauce, otherwise the base will be too soggy. One or two table spoons of sauce will be sufficient for each slice.

Add the Mozzarella

At this point, sprinkle each slice of bread with the mozzarella cubes.

If you are going to put some more toppings on your mini pizzas, add them at this stage. I have diced my aubergines and added them at the top of just two bases. The other two pizzas are "Margherita" style.

Bake the Speedy Pizzas

Put the tray in the oven that in the meantime has reached the desired temperature and let the pizzas bake for 15 minutes, or until the mozzarella is golden.

Enjoy!

After 15 minutes, remove the tray from the oven and serve the mini pizzas.
