SpEGGtacular Deviled Eggs
Why are they called deviled eggs? If they’re not red. They don’t have an arrowhead-shaped tail. So, why do we call them deviled eggs? I decided to research the history of the name as I wanted to make Halloween themed deviled eggs.
The term ‘deviled egg’ comes from an 18th-century culinary term that the Oxford English Dictionary originally used to describe a fried or boiled dish that was highly seasoned, and was eventually used to also include spicy, condiment-filled dishes.
According to The History Channel, deviled eggs go all the way back to Ancient Rome, where eggs were boiled, seasoned with spicy sauces, and then served at the beginning of meals.
An 1896 cookbook was one of the first to suggest using mayonnaise as a way to bind ground yolks together, which leads to today’s classic recipe that calls for mayo, mustard, and paprika.
Whether you’re a home chef or a professional, consider adding your own twist like adding back , sriracha, kimchi, crab meat, dill, or pickles as a way to make your deviled eggs stand out from all the rest.

Supplies
Ingredients:
- 12 Eggs
- 5 Tbsp. Mayonnaise
- 2 Tsp. Dijon Mustard
- 3 Tbsp. Sweet Pickle Relish
- 1/4 Tsp. Sea Salt
- 1/4 Tsp. Black Pepper
- 1 Tsp. Roasted Garlic Seasoning
- 1/4 Tsp. Paprika
Ingredients for Decorated Deviled Eggs:
- 1/4 Cup Bacon Bits
- 1 Tbsp. White Corn
- 1 Red Pepper
- 1 Green Pepper
- 1 Tbsp. Olive Oil (roast peppers)
Supplies:
- 1 large boiling pot with lid
- Measuring Cup (1/4)
- Measuring Spoons (1 tbsp., 1 tsp., & 1/4 tsp.)
- 2 Mixing Bowls (medium & small)
- 3 small ramekins or 8 ounce bowl
- 1 Ladle
- 1 Spatula
- 1 Whisk or Electric Mixer
- 1 Paring Knife
- 1 Fork
- 1 Spoon
- 1 Baking pan (roasting pan)
- 1 Serving Platter (for serving deviled eggs)
Optional:
- Food Coloring for egg filling, if desired: Purple, Red & Green
- Sprinkles for decorating eggs or sprinkling on serving platter
Boil the Eggs
How to make hard boiled eggs:
Pour cool water in large pot half way to the top. Add 1 teaspoon of salt and 1/4 cup of vinegar.
Stir with a whisk and let set for a couple of minutes.
Then, take one egg in ladle and place in pot one at a time. Add water if needed to cover the eggs.
Bring to a boil; cover, remove pot from heat, and let stand for 15 minutes. After 15 minutes, drain the water, then fill medium bowl with cold water and ice. Allow to sit for 5 minutes.
Prepare the Eggs
How to prepare eggs:
Tap each egg firmly on the counter until cracks from all over the shell. Peel under cold running water.
Slice eggs in half lengthwise and carefully remove yolks.
Prepare Egg Filling
How to prepare egg filling:
Add mayonnaise to bowl, followed by mustard, pickle relish, salt, black pepper and roasted garlic.
Stir all ingredients together in a medium bowl with a fork. Then, add paprika.
Take whisk or electric mixture and mix ingredients together until desired texture is reached.
Color the Egg Filling
How to color the egg filling:
Take a spoon and divide the egg filling in equal parts into 3 ramekins or small bowls.
Add 5 to 6 drops of food coloring to each bowl.
Take a spoon or whisk and blend together until desired color and consistency is reached.
Fill the Yolks
How to spoon yolks in sliced egg yolks:
Spoon yolk mixture carefully into egg whites.
Be creative in your design and color patterns.
Optional: The middle 3 yolks will be designed as skulls.
Roast the Peppers
How to roast peppers:
Take 1 red and green pepper; cut each in thirds using a paring knife and remove core and lining.
On metal baking tray, place all piece of tin foil and place red and green peppers on tray 2 inches apart.
Using a spoon, add a couple of drops to the top of each pepper.
Pre-heat broiler to 525 degrees Fahrenheit.
Place baking sheet in broiler and set time for 20 minutes.
Check peppers to see if bubbly and has black spot. If not, broil for 5 additional minutes or until roasted.
Remove peppers from oven and let cool for 5 minutes.
Take each pepper and slice 1/2 inch by 2 inch strip. Remove the skin and finely dice into 1/8th x 1/8th pieces. These piece will be used for decorating the deviled eggs that look like skulls.
Decorate the Deviled Eggs
How to decorate deviled skull eggs:
Take 2 straws and pierce in one half of boiled egg to form eyes of skull.
Take red or green roasted peppers and place in holes to form eyes fir skull.
Take 1 wooden skewer and pierce a hole to form nose.
Take a piece of bacon bit and place in hole for nose of skull.
Take 1-2 pieces of corn and place where teeth would be under the nose of the boiled egg on the skull.
For other deviled eggs, you can use sprinkles or add roasted peppers, bacon and corn. Use your creativity.
Transfer to any platter or use an egg platter. These are great for parties as they are a topic of conversation.
