Soyrizo Breakfast Tacos

This is a recipe for making delicious soyrizo (vegetarian chorizo) breakfast tacos. I came up with this recipe after falling in love with a local restaurant's breakfast burrito, called the Toluca, and recreating a similar taco version with what I had on hand. I love the taste of chorizo, especially with scrambled eggs, but even though I'm not a vegetarian, I prefer soyrizo not only for its flavor, but it's not greasy like meat-based chorizo. Add any toppings you have, avocado, cilantro, fresh pico de gallo or diced tomato, even add breakfast potatoes (hashbrowns/tator tots/diced potatoes) if you have them. Make it your own, they are easy and flexible to whatever you have on hand. Enjoy!

Supplies

Tortillas - stack of corn or flour, taco sized

4 Eggs

1/3 cup soyrizo, crumbled

1/4 cup frozen spinach, thawed & draing

1/2 cup Mexican blend cheese

1 Tbsp vegetable oil

1/3 cup diced yellow/sweet onion

Salsa, for serving

Cilantro, for garnish


Cook the Soyrizo and Onion

First, heat up the oil in an iron skillet on med-low. *Soyrizo tends to spatter if cooked too hot so keep the temp on the lower side. Once the oil is heated, add your soyrizo and diced onion. Stirring occasionally. Cook until the onion begins to soften and get translucent, about 4-5 minutes.

Add Spinach

Next, add your spinach. Keep cooking and stirring until heated through and well mixed.

Add Eggs

Add your eggs and scramble them with the soyrizo mixture until cooked through.

Add Cheese Blend and Melt

Once your eggs are well blended/scrambled and cooked through, turn off heat and add your cheese over the top. Place a well-fitting lid on top of the skillet to melt the cheese and keep the eggs warm while you cook your tortillas.

Warm Up Tortillas

Using either the griddle on your stovetop or a pancake pan/large flat-bottomed skillet on med-high temp, warm up your tortillas until soft and pliable, flipping them over midway to warm both sides. When the tortillas are done, place on a plate and cover with another plate to keep warm while you finish the rest of the tortillas.

Assemble Your Tacos and Enjoy!

Place your soyrizo eggs in the warm tortillas and top with fresh cilantro and salsa. If you have them, add avocado or if you like things a little spicy, top with your hot sauce of choice. Eat and enjoy!
