"Souper" Easy Carrot Soup
In this Instructable, I will show you how to make carrot soup in a Vitamix or in a pot on the stovetop burner. This homemade carrot soup recipe is super easy to make with just a handful of easy ingredients.

Supplies
Ingredients:
- 1 lb of carrots (453g)
- 1/4 cup of sweet onion (doesn't have to be exact) (40g)
- 1 Tbsp of olive oil (15g)
- 2 to 5 cloves of fresh garlic or use 1/4 to 1/2 tsp of garlic powder
- 3 to 4 sprigs of fresh thyme or use 1/2 tsp or so of dry thyme
- 3 cups of vegetable stock (can use other stock like chicken stock, beef stock, etc.) (710g)
Tools:
- Blender/Vitamix
- Cutting board
- Knife
Mix and Heat
Okay so seriously if you have a Vitamix or other high-speed blenders that can do soups in them, this carrot soup is incredibly easy.
All you need to do is put your carrots, onion, olive oil, garlic, thyme, and vegetable stock in the blender and then use the "soup setting" or start on the lowest speed and then gradually turn it to the highest speed and let it run 5 to 6 minutes.
The friction from the high-speed blender actually cooks and heats up the soup, pretty awesome! If you have a "soup" setting just press that and it will do its thing.
PRO TIP: If you want a better depth of flavor I recommend roasting the veggies first BEFORE blending them. Take the carrots, onion, and garlic and place them in a baking pan, and then roast in the oven at 375F/190C for 30 to 40 minutes until soft and they get some caramelization on them.
If you don't have a Vitamix or other high-speed blender that can do soups in them, put your ingredients in whatever blender you have and blend for a few minutes until nice and smooth. Then pour it into a pot and cook it on the stovetop until nice and hot.
Serve
And just like that the carrot soup is ready. I told you it was easy! Pour it into some serving bowls or mugs and then add salt and pepper to taste and any other spices you may want to add.

TIP: You can experiment with other veggies too if you want instead of carrots or a combination of them, and try different stocks and broths as well.
