Skillet Pizza
I love pizza. But I cannot enjoy it as much as I would like because I have Type II Diabetes and have to limit the amount of carbohydrates in my diet. Most pizza crust have a lot of carbs. I tried the cauliflower crust pizzas and found the taste and texture wanting. So I came up with this solution. I call it Skillet Pizza because it prepared on the stove top in a skillet.
Supplies
You will need carb lean tortillas, pizza sauce, mozzarella cheese (or whatever cheese you prefer), and desired toppings. The brand of tortilla I use has only 23g of carbs. Most other tortilla of the same diameter have 36g of carbs.
Laying the Foundation
Place tortilla in skillet and spread pizza sauce on it. I use Delgrosso Pizza Sauce because I like its taste. Use the pizza sauce you prefer or make your own.
Top the Pizza
Next add cheese and the desired toppings. For this pizza I used pepperoni and sausage. You can use your favorite toppings. You don't want to add too many toppings because the cheese will not properly melt and the topping may be cold or you will burn the tortilla.
Cooking the Pizza
Cover the skillet with a lid. I like the glass lid because I can check on the pizza without lifting the lid and letting the heat out. The trapped heat will help the cheese and topping cook. I cook my pizza on low heat. This cooks the pizza in about 10 minutes. You will need to adjust time and heat for best results. The tortillas on my pizzas have turned a nice golden brown and are crispy. Too long and the tortilla will burn. Not long enough Your toppings will be under cooked and the tortilla will be too soft.
Enjoy Your Pizza
After the cheese has melted you pizza is ready to eat.
Variations
There are many variation you can make to skillet pizzas. White pizza or a Chicken Bacon Ranch pizza. Pictured is a Chicken Bacon Ranch pizza.
