Simple Layer Cake With Cheesecake Filling Recipe

I wanted to make a simple cake with accessible ingredients, that would be delicious and beautiful. It consists of simple cake layers filled with cheesecake filling and decorated with fresh fruit bouquet. It is dedicated to my grandma, Emma.
Ingredients:

Cake
Flour - 400 grams

Baking powder - 10 grams

Condensed milk - 380-400 grams

Sugar - 400 grams

4 Eggs

Vanilla sugar - 10 grams

Sour cream - 500 ml

Cheesecake Frosting

Ricotta cheese - 500 grams

Butter - 500 grams

Condensed milk - 380-400 grams

Vanilla sugar - 10 grams

Decoration

Fruits, berries

Line two 28 cm in diameter cake pans with parchment paper and brush with butter. Set aside. If you do not have two cake pans of the same size, make the batter twice, making half of the amount each time. Don’t worry – the batter is really quick and easy to make.

Combine 400 grams of condensed milk, 500 ml of sour cream, 4 eggs, 400 grams of sugar, and 10 grams of vanilla sugar in a bowl. Mix until incorporated.

Mix together 400 grams of flour and 10 grams of baking powder. Sift over the egg mixture. Mix the dry and wet ingredients together until smooth (it’s a quick process – don’t over-mix). Pour the batter evenly into the prepared cake pans. Bake in a preheated oven at 180°C for 30 minutes. Test for doneness – an inserted wooden skewer should come out clean.

Remove from the oven, cool slightly, unmold, remove the parchment paper and cool completely on a rack.

Make the cheesecake frosting: Pass 500 grams (18 oz) of homemade ricotta cheese through a sieve.

Place 500 grams of soft butter in the bowl of a stand mixer. Add 10 grams of vanilla sugar and whip on high speed until light and creamy. Gradually add 400 grams of homemade condensed milk. Continue whipping, and gradually add the ricotta cheese.

Assemble the cake: Slice each sponge cake into 2 layers. We’ll need 4 layers of cake in total.

Place a layer of cake on a serving plate. Spread ¼ of the cheesecake frosting evenly over the cake layer. Set another layer on top, and continue layering with the remaining frosting and cake layers. Make sure to place the fourth cake layer flat side facing up. Cover the sides and top of the cake with the remaining cheesecake frosting.
