Sea Salt Vegan Chocolate Chip Cookies
These salty and sweet vegan cookies are a healthier alternative to the usual chocolate chip cookies I make that take two sticks of butter!
Supplies
You need:
-a mixer
-three cookie sheets lined with parchment paper
Ingredients (yields 18 large cookies)
-3/4 cup margarine
-1 teaspoon vanilla extract
-1 cup granulated sugar
-1 cup dark brown sugar
-1/3 soy milk
-1/3 vegetable oil
-3 1/2 cups all purpose flour
-2 teaspoons baking powder
-2 teaspoons baking soda
-1/2 teaspoon salt
-1 cup rolled oats
-1 1/4 cup semi-sweet chocolate chunks
-sea salt for garnish
Cream Sugars, Margarine, and Vanilla
Preheat oven to 375 degrees F. Cream the sugar, brown sugar, margarine, and vanilla until fluffy (about two minutes) making sure to wipe down the sides to incorporate fully.
Add Vegetable Oil and Soy Milk
Whisk together the vegetable oil and soy milk, then add to the sugar mixture. Make sure to wipe down the sides to incorporate all of the ingredients fully.
Combine Dry Ingredients and Add to the Wet Mixture
Combine the flour, baking powder, baking soda, and salt. Mix in the oats. Add the dry ingredients into the wet mixture and combine until a wet dough forms. Stir in the chocolate chips.
Spoon Dough Onto Cookie Sheets and Bake
This dough will look very wet, but don't fret! When you spoon it out, you'll feel that it holds a good form. Using a tablespoon, drop six cookies onto each parchment paper lined-cookie sheet. Bake cookies for about 9 minutes (or until the edges begin to brown).
Sprinkle With Sea Salt and Enjoy!
After you remove the cookies from the oven, immediately sprinkle with sea salt and allow to cool. Then enjoy your cookies!!
