Roasted Rainbow Carrots

Ingredients:

  • Rainbow carrots (or regular carrots if you can't find rainbow ones)
  • Olive oil
  • Salt
  • Pepper

Directions:

  1. Preheat oven to 450.
  2. Peel carrots using vegetable peeler.
  3. Chop carrots into desired lengths.
  4. Toss lightly in olive oil.
  5. Sprinkle with salt and pepper.
  6. Bake in oven, stirring halfway through, until fork easily goes through carrots- about 30 minutes.
