Rebel Velvet Cake (vegan)

Hi! This is a vegan cake which is inspired in "Piñata Cake" and "Red Velvet Cake".

Red Velvet Cake is obviously red coloured, but I made it with chocolate also, this is why it is rebel ;)

INGREDIENTS

INGREDIENTS FOR THE CAKE:

- 3 beetroots (boiled)

- 1 cup sugar

- 2 tbsp oil (olive oil, sunfloweer oil,...)

- 3 tsp vanilla extract

- 2 1/2 cups vegetable milk (oat, soy, nuts, rice,...)

- 3 and 1/2 cups flour

- 1/2 cup cocoa powder

- 4 tsp baking powder

- 4 tsp vinegar

- 1 tsp salt

INGREDIENTS FOR THE ICING:

- 3/4 cup vegan butter

- 2 cups icing sugar (you can process yourself the sugar in a blender)

- 1 tsp lemon juice

- 2 tsp vanilla extract

- 1/2 cup vegan white chocolate

- 2 tsp apple cider vinegar-

- 1/2 tsp salt

INGREDIENTS FOR THE CHOCOLATE LAZE

- Chocolate nibs

MAKING THE CAKE

1.- If the beets are raw, then boil for 30 minutes and. Then Puree the
beetroots

2.-Pre heat the oven

3.- Mix together the dry ingredients. In a different bowl mix the wet ingredients.

4.- Now, mix all the ingredients together

5.- Place the mixing in a oven-safe mould.

6.- Bake for 45 minutes, 180ºC

MAKING THE ICING

1.- Melt the vegan white chocolate. Note: If you want the icing without the white chocolate, you can skip this step

2.- Mix all the ingredients together.

To get a better "icing" texture, you can put it in the frozen for 30 minutes.

1.- Cut the cake into three layers.

2.- If you want the cake, like "piñata cake" style, then you need to cut a hole in the second layer. You can use a bowl to help you to cut a perfect circle in the middle of the cake.

3.-Place the first layer.

4.- Put the icing over the first layer.

5.- Now place the second layer (the one with the hole)

6.- Spread the icing over this second layer.

7.- Put inside the hole chocolates, fruits,candies,... whatever you like

8.- Place the last cake layer.

9.-Cover the whole cake with the rest of the icing.

To decorate the cake you can add strawberries, blueberries, chocolate, ..

I also added a CHOCOLATE LAZE:

- Melt the chocolate nibs.

- Put the chocolate into a pastry bag

- "Draw" with the chocolate over a baking sheet.

- Wait until it gets chill.

- Now you can place it along the cake, being very careful
