Rainbow Cheesecake Recipe

Hi everyone, I'll be teaching you how to make a beautiful Rainbow Cheesecake! This no-bake cheesecake is a true showstopper, featuring vibrant layers of all the colors of the rainbow. Not only is it visually pretty, but it's also incredibly easy to make and absolutely delicious.

This recipe uses white chocolate, cream cheese and gelatin powder to enhance the flavor and texture, creating a rich and decadent dessert that will delight both your eyes and taste buds!

Ingredients


Crust:

  • 12 packages of oreos cookies
  • 125gr butter

Cheesecake:

  • 2 tbsp (15gr) powdered gelatine + 125ml (1/2cup) cold water
  • Oreo filling (taken from the oreo cookie for the crust)
  • 1/2cup of icing sugar
  • 630gr cream cheese
  • 100gr white chocolate
  • 400ml heavy cream
  • Food coloring

Utensils:

  • Springform pan (24cm) diameter.
  • Mixing bowl
  • Spatula
  • Electric hand mixer
  • 6 bowls for separating de mixture for the colors.
  • Food processor

Prepare the Oreo Crust

  1. Begin by separating the Oreo cookies from the filling. Set the filling aside for later use. Place the Oreo cookies (without the filling) into a food processor. Blitz until you achieve a fine crumb texture. Melt the butter in a small saucepan over low heat or in the microwave until fully melted.
  2. Pour the melted butter into the Oreo crumbs.
  3. Mix until it resembles wet sand and holds together when pressed.
  4. Pour the Oreo mixture into the bottom a springform pan.
  5. Use the back of a spoon or a flat-bottomed glass to firmly press the crumbs into an even layer at the bottom of the pan. Make sure the crust is compact.

Place the springform pan in the refrigerator and let the crust chill for at least 30 minutes.

  1. In a large mixing bowl, add the softened cream cheese, the reserved Oreo filling, icing sugar, vainilla extract and white chocolate.
  2. Beat the mixture on medium speed until smooth and creamy.
  3. Pour the heavy cream into the mixture.
  4. Continue mixing until the filling is smooth and slightly fluffy. This should take about 2-3 minutes.
  5. In a small bowl, combine the gelatin powder and water, stirring well to dissolve. Let the gelatin sit for a few minutes to bloom. Microwave the gelatin mixture for 30 seconds, or until the gelatin is fully dissolved and liquid. Stir to ensure it's smooth.
  6. Gradually add the dissolved gelatin to the cheesecake filling.
  7. Use a spatula to gently fold the gelatin into the mixture, ensuring it is evenly distributed.

1, 2, 3. Once your cheesecake filling is smooth and the gelatin is fully incorporated, divide the mixture into 6 separate bowls. Each bowl will contain a decreasing amount of filling to create the layered effect of a rainbow. For example, the red bowl will have the most filling, while the purple bowl will have the least. You can roughly follow these proportions, (by volume):

  • Red: 1 ½ cups
  • Orange: 1 ¼ cups
  • Yellow: 1 cup
  • Green: ¾ cup
  • Blue: ½ cup
  • Purple: ¼ cup

Using gel or liquid food coloring, add the desired amount to each bowl to achieve vibrant colors. Stir well to ensure even coloring.

Pour the Cheesecake Filling

  1. Remove the chilled crust from the refrigerator.
  2. Carefully pour the red cheesecake filling over the crust and spread it evenly with a spatula or the back of a spoon.
  3. Repeat this process with the orange, yellow, green, blue, and purple fillings, pouring each color in the center of the previous layer. The layers will naturally spread, creating a smooth transition between colors.
  4. Once all the layers are added, gently tap the springform pan on the counter to remove any air bubbles and smooth the surface.
  5. Cover the cheesecake with plastic wrap or foil and refrigerate for at least 4-6 hours, or until fully set. For best results, let it chill overnight.
