Pumpkin Whoppie Pies

Halloween is just around the corner and there isn't a better treat for a party or get together than delicious pumpkin whoppie pies!! This instructables will teach you how to make these tasty treats!

Making the Cakes

Ingredients

3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

2 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon freshly grated nutmeg

2 cups packed light brown sugar

1 cup vegetable oil

1 (30-ounce) can pure pumpkin (not pie filling)

2 large eggs

2 teaspoons pure vanilla extract

Start by mixing the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and brown sugar into a bowl of its own. Mix it all together until it's all combined into one powder. Just like in picture 2.

In a separate bowl mix together the vegetable oil, pumpkin, eggs and vanilla. Like in picture 3.

Then dump your first bowl of powder mixture into your second bowl and beat it all together.

Laying Out the Cakes

After mixing all the ingredients together, take a measuring cup and scoop out the batter and place them on a piece of placement sheet in cookie shapes like in picture 1.

Set your oven for 350 degrees, and bake the first batch of cakes for 12-18 minutes depending on how your oven bakes.

Making the Icing

Ingredients

3 Egg Whites

3 teaspoon of vanilla

3 tablespoons of flour

3 tablespoons milk

3/4 cup crisco

2 and 3/4 cups of 10x sugar

Start by putting all your egg whites into a bowl, do not put the yokes in. Next beat the egg whites until they look like picture 1. Then through all you other ingredients in the bowl, beat it all together with a mixer and then you should eventually have the vanilla icing like in picture 2!

Now place your icing between two cakes and you have your finished pumpkin Whoppie Pies! They should be moist and delicious, enjoy!!
