Pumpkin Whoopies Pies
Here's a fun fall and Halloween dessert that's easy to make! It's a delicious cream cheese frosting in between two scrumptious pumpkin cookies! (This makes about 8 full cookies depending on how large you make them. I also used two baking sheets)
Supplies
The Cookie:
2 cups All-Purpose Flour
1 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1/2 cup Butter/1 Stick or 8 tbsp
1 1/4 cups Granulated Sugar
2 Eggs
1 cup Pumpkin Puree
1 tsp Vanilla Extract
The Filling:
4 oz Cream Cheese
6 tbsp Butter
1 1/2 cups Powdered Sugar
1 tsp Vanilla Extract
The Dry Ingredients
Before you do anything preheat your oven to 350 degrees Fahrenheit. Then first, you'll need to combine all your dry ingredients in a large bowl (flour, cinnamon, ginger, salt, baking powder, and baking soda)
Creaming
Then in a separate large bowl or a stand mixer/kitchen aid cream together your sugar and butter.
Adding to the Creamed Mixture
After creaming your butter and sugar crack in your eggs and thoroughly combine.
Last Step in Your Wet Mixture
Then to your wet mixture add in the pumpkin puree and your vanilla extract and combine.
Getting Ready to Bake
Combine together both your wet and dry mixture by gradually adding in your dry to your wet. Try not to over-mix by only combining until both mixtures are just well enough combined. Then on a lined baking sheet scoop rounds of your mixture about 2-3 inches wide. After your oven has preheated pop them in for about 13 minutes and then let cool completely.
Cream Cheese Frosting
You can really use any filling of your choice but here's my preferably filling on how to make delicious cream cheese frosting! In larger bowl or stand mixer/kitchen aid cream together your cream cheese, butter, and vanilla extract until thoroughly combined. Then slowing adding in your powdered sugar till you have your frosting!
Assembly!
Just fill a piping bag with your filling and pipe a decent amount of cream cheese frosting in the center of one cookie then adding the other on top to make a Pumpkin Whoopie Pie! (Make sure to keep refrigerated)
