Pumpkin Cake Pops

Supplies
You Will Need
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- ½ cup canola oil
- 2 large eggs
- ½ packed light or dark brown sugar
- ¼ cup granulated sugar
- ½ a can (7.5 ounces) pumpkin puree
- ¾ teaspoons vanilla extract
- Sticks
- Measuring cups (1 cup, ½ cup, ¼ cup,)
- Teaspoons and tablespoons
- Coconut oil
- Vanilla icing White or regular chocolate chips
- Food coloring (optional)
- Sprinkles (optional)
- 9 inch pan
Dry Ingredients
The first thing you need to do is preheat the oven to 350°F (177°C). Sometimes it takes awhile to heat up, so it's best to do it first. Then, mix 1 cup of flour, with 1 tsp baking powder, ½ tsp salt and ½ tsp of baking soda. Add ¾ tsp cinnamon and 1 tsp pumpkin pie spice and set aside.
Wet Ingredients
In a new bowl, mix ¼ cup sugar and ½ cup brown sugar. Then add ½ cup canola oil and 2 large eggs. Mix until combined. Add ½ a can or 7.5 oz of pumpkin, and a splash of vanilla.
Mixing Them Together
Add the wet ingredients into the dry ingredients. Mix well until combined. Make sure you get all the flour at the bottom and on the sides. The batter should be thick so don’t add any water.
Baking
Grease a cake pan. Preferably an 8 inch pan. Pour the batter in and bake for 30-35 minutes.
Turning the Cake Into Cake Pops
Once the cake is baked, crumble it a little bit with your hands then add ¼ cup of icing and crumble it some more. When you think you’ve got the right consistency, shape them into medium sized balls.
Decoration
Melt chocolate with a little bit of coconut oil. You can add food coloring and sprinkles. It’s up to you. I made mine look like a pumpkin with orange food coloring and a regular chocolate chip on top. But you can do whatever you want.
