Pull Apart Sweet Rainbow Bread
Another fav. in the family. You can use dry cranberries or chocolate chips if you don't like raisins :)
Ingredients and Method
This makes at least 2 round pan of 9 inch each (depending how many slices you place in a pan)
5 - 6 cups bread flour
1 1/2 tbsp active dry yeast
2 cups lukewarm water
1 tsp salt
4 tbsps vegetable oil
8 tbsps sugar
Raisins, sugar, and chocolate rice (chocolate rice is optional, but you can find, get Ritz brand, from Holland)
Food coloring
Dissolve yeast in lukewarm water, let stand until foamy.
Meanwhile in a separate bowl, mix sugar and bread flour well. When water mixture already foamy, mix in salt and oil, mix well.
Mix in flour one cup at a time. Knead dough on a floured surface.
Place in an oil greased bowl, turn dough to coat. Cover with damp towel, place in a warm place for an hour or until doubled in size.
Punch down dough, knead a bit and divide dough into 6 equal size balls, cover and let rise
Add green food color to a ball, knead lightly just until it colors the dough (no need until it turns completely green, just slightly/unevenly - see picture), flatten with rolling pin and sprinkle with raisins, sugar, and chocolate rice. Roll to a log and slice (as you would when you make cinnamon rolls).
Repeat this step with other color. Place each slices randomly so they would create mixing color once baked and pulled away. Leave some space for rising.
Cover the pan and let it rise and bake at 350 F for 30 minutes
Enjoy~
You can brush the top with butter as soon as its out of oven, leave it as is, or brush with simple icing sugar mixed with a little water.
