Potato Bajji

A bajji is a traditional Indian recipe in which a vegetable is coated with a spicy, freshly prepared batter and then deep fried. The Bajji is usually called 'Chai Time Snack' which simply means 'Tea Time Snack'. As the name suggests, this is an amazing snack to be enjoyed with some hot tea on a chilly evening.

In this Instructable, I'll show you how to make some hot n spicy potato bajjis. Get ready to amaze your friends over tea with this simple snack. Let's get cooking !!

Ingredients

To make this amazing snack, you'll need to find the following ingredients in your shopping cart:

  • Potatoes
  • Gram Flour / Besan Flour
  • Corn Flour
  • Red Chili Powder
  • Salt
  • Water
  • Oil

That's all the ingredients you'll need to treat yourself.

Prepping the Batter

The batter is a key part of the bajji, as this gives the taste and crispiness to the snack. The flavor and the color of the bajji is totally dependent on the way the batter is prepared.

Follow the steps carefully to get the perfect batter.

First, take in a bowl, 1/4 Cup Gram Flour, 2 Tablespoons of Corn Flour, 1 Tablespoons of red chili powder and the necessary quantity of salt. Now add water into it and mix it well. To make the bajji more crispy, you can optionally add a pinch of baking soda to it.

Mix it well so that no lumps are formed in the batter and place it aside.

Prepping the Potato

First thing to do when dealing with potatoes is to wash it well and get off all the dirt from it. It's totally a personal preference whether you peel the potatoes or not.

Now using a mandoline, slice all the potatoes into decent sized pieces. Keep them aside as it's time for deep frying.

Fry Time

Now that you have all the ingredients prepared and ready, it's time to deep fry the potatoes and treat yourself with some hot bajji.

Heat some oil in a frying pan.

Dip the potatoes in the batter and coat it well on both sides with it. Now carefully drop the coated potatoes into the hot oil and let it fry until it's golden orange in color.

Enjoy the Snack

Once the crust turns golden orange in color, remove the bajjis from the oil and press them on some paper napkins to remove all the excess oil from it. This is a necessary step so that you don't end up increasing your cholesterol levels.

Now serve it with your favorite chutneys or some tomato ketchup. You can top it with some freshly cut coriander leaves. Enjoy your bajjis with some hot tea.
