Pineapple (Incident) Casserole

With the series finale of How I Met Your Mother coming up on Monday, what better way is there to capture the confusion of the pineapple incident than with a pineapple casserole? We may never find out what happened with the pineapple incident, but maybe this will help ease the pain.

This casserole combines the totally unrelated flavors of cheese and pineapple for a surprising comfort food. We'll all need some comfort come Monday night!

Ingredients

3/4 c. of sugar
2 cans of pineapple tidbits in juice
5 Tbsp all-purpose flour
1 stick of butter or margarine
2 c. grated cheddar cheese (I like to use 1c. mild cheddar and 1c. sharp cheddar, but it's entirely up to your preference)
2 sleeves of Ritz crackers

Tips:
As you can see in the picture, I used one can of pineapple tidbits & one of pineapple chunks. Because the smaller pieces work best, I went through and cut each of the chunks into smaller pieces.

Prep Your Oven & Topping

Pre-heat your oven to 350 degrees.

Melt your butter. I like to cut mine into little chunks, put it in a bowl, and microwaved it. How you melt it is up to you, just do it.

Crush your crackers. If you have a ziploc bag, that will be by far the easiest way. Just pour your crackers into the bag & crush them with your fingers. These type of crackers crush pretty easily. You can also just roll the crackers in the sleeve if you don't have a bag.

Mix It All Together

Pour your pineapple tidbits straight into your casserole dish, juice and all. I only use the juice from one of the cans (pour the juice from one can into a cup and set that aside), but if you want a juicier casserole you can use the juice from both cans.

Mix in your sugar, flour, & cheese. I like to sprinkle the flour over the top, mix all of it in, and then do the same with the sugar. After mixing that together thoroughly, mix in the cheese.

Spread the cracker crumbs over the top. Don't mix these in, just leave them as a layer over the whole thing.

Pour the melted butter over the top of everything. Try really hard to drizzle it over all of the crackers as best you can. I personally can never get it 100% even, but go you if you can.

Bake It

Bake it for 45 minutes. When you take it out, the top will be only very slightly browned, and you should be able to hear the cheese bubbling on the inside.

Let it sit for a few minutes before you cut into it, or the inside will just spill out everywhere.
