Pineapple Cake With Pineapple Buttercream Frosting

Calling all pineapple lovers!

Treat yourself with this scrumptious flavorful cake.

Ingredients:

For Pineapple cake:

2 cups all-purpose flour

2 cups white sugar

2 eggs

2 teaspoons baking soda

1 teaspoon vanilla extract

1/4 cup vegetable oil

20 Ounce crushed pineapple juice

For Pineapple frosting:

1 cup unsalted butter

5 to 6 cups of icing sugar

1/4 cup of pineapple juice (at room temperature)

1 tbsp vanilla essence (optional)

Preparation of Pineapple Cake

Pineapple Cake

Preheat oven to 350 degrees F (175 degrees C).

Grease a 9x13 baking dish.In a large bowl, mix together the flour, sugar and baking soda. Make a well in the center and add the eggs, crushed juice, vanilla and oil. Mix well to blend.

Bake for 30 minutes, or until a toothpick inserted into cake comes out clean.

Cream together butter, pineapple juice and add powdered sugar about a cup at a time, until desired consistency is reached.

Frosting the cake

Once the cake is cooled down, cut the cake in the center to make to equal size cake.

Place one layer of cake and frost evenly and place another layer over the first layer of cake and frost again.

I have used Wilton 1 tip for rose piping.

I started decorating from the corner of cake. Then I wrote New year message using melted chocolate. Finished it with more roses.
