Pi Apple Pie

Looking for a Pi Day pie recipe? This is a super easy pie recipe that tastes amazing! If you don't want to use premade pie crust, you can use your favourite double pie crust.

Supplies

  • 2 premade pie crusts OR 1 recipe for double pie crust
  • 2 1/4 lb Granny Smith Apples
  • 1 1/4 tsp cinnamon
  • 8 tbsp butter (salted or unsalted)
  • 3 tbsp all-purpose flour + extra for rolling
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 egg + 1 tbsp water, for egg wash
  • Icing sugar, for decoration.

Preheat the oven to 425°F. Melt butter in medium saucepan over medium-high heat. Whisk in the flour and simmer for one minute, whisking constantly. Whisk in the water and sugar and bring to a boil. Reduce heat and continue simmering for 3 minutes, whisking frequently. Remove pan from heat.

Peel, core, and thinly slice 7 cups of apples and place them in a large bowl. Sprinkle the top cinnamon and toss to combine. Pour the sauce you made in the previous step over the apples and stir to coat the apple slices.

Put the apple mixture into one of the pie shells.

Roll the second crust into an 13" round and cut 1/2" strips using a knife or pizza cutter. You'll need 17 strips. Arrange the strips into a lattice pattern over top. Trim the edges. Beat together the egg and water and brush the top of the pie with the egg wash.

Bake the pie at 425°F for 15 minutes. Reduce the heat to 350°F and continue baking for another 45 minutes or until apples are soft and filling is bubbling through the vents. Rest at room temperature 1 hour before serving,

Make the pi sign using the leftover dough scraps. Create a paper template by tracing the pi sign onto a piece of paper and cut out she shape. Use a knife to cut out the shape onto the pie dough. Line a small baking tray with parchment paper. Bake for 15-18 minutes, or until golden brown.

Bake it separately from the pie because they need less time in the oven then the pie.

Once it's cool, sprinkle the pi sign with icing sugar. Arrange the pi sign on the pie.
