Perfect Pandemic Pizza

Ok, let's face the facts: A lot of us are still under stay at home orders due to Covid-19. It is beginning to become warm and sunny outside and I needed color, fresh fruits, and a little adventure to keep me focused on staying safe and healthy, without packing on more quarantine pounds!

I present the Perfect Pandemic Pizza, an easy summer snack that is so bright and colorful, that it will chase away the quarantine blues. It is vegan and allergy friendly, making it a great healthy treat to keep you going in these stressful times.

So grab your favorite fruits and let's get started!

Gather Crust Ingredients

Your first step is to gather your crust ingredients!

  • 2 Cups Oat Flour (see notes for homemade oat flour)
  • ¼ Cup Sunflower Seed Butter (see notes for more options)
  • ¼ Cup + 1 Tbs Maple Syrup
  • 4 Tbs Water

Notes:

Don’t want to buy a whole bag of oat flour? Easily make your own by grinding whole oats in a blender or food processor.

I chose to use sunflower seed butter, but almond butter or peanut butter both work.

Mix Ingredients

Pour all ingredients into a medium bowl and mix thoroughly. It can get thick very fast, so feel free to knead the dough instead of stirring. Expect to get a very heavy consistency, much thicker than traditional pizza dough.

Notes:

  • Add more water or oat flour if needed to reach desired consistency.

Transfer to Baking Sheet

Transfer to a lightly greased baking sheet and flatten using a rolling pin to ensure a smooth lump free crust. I would suggest a thicker crust about ¼ of an inch. That way the crust is less likely to crack later.

Notes:

  • In this tutorial I use a round baking sheet, but you can use whatever you have available. These pizza’s look just as beautiful when made in a square baking sheet!

Create Outer Crust Rim

Now work your way around the edge of the circle to form the raised rim. This step is important because it will help keep the yogurt and fruit from falling off the back end.

Bake Crust in Oven

Set your oven to 325 degrees and allow it to warm up. Next let the crust bake for about 15 minutes. Once your crust has turned a nice golden brown, remove from oven, and let it completely cool. If the crust is too warm, the yogurt will liquefy.

My goal with this crust was to remove oil and other heavily processed food, as a result it is much more brittle than traditional pizza crust. I found that using a serrated kitchen knife to “saw” through the crust worked best. With any knife just go slowly and carefully to avoid cracking the crust. Cut the crust into 8 slices and transfer to your serving platter.

Spread Yogurt

Next spread the yogurt onto the crust. My two favorite types of yogurt to use with this recipe, are coconut based yogurts and oat based yogurts. In this particular recipe I am using So Delicious Coconut Milk Yogurt Alternative. But feel free to use your own favorite brand of yogurt!

Chose Your Fruit

Pick your fresh fruits and slice into manageable pieces. In this recipe I used:

  • About half a dry pint of strawberries
  • A single slice of a whole pineapple
  • ¼ cup blueberries
  • 1 large tangerine
  • 1 kiwi

Arrange your fruit into colorful combinations. This step is all about having fun and being creative so go all out! You can do a scattered look, create color combos, or have a star like pattern like shown in my pictures. It is totally up to you.
