Peppermint Chocolate Crunch Cookies!

These cookies are SO delicious! They are perfect treats to have around the holidays! Everyone who has tried these has asked for the recipe so they can make for themselves. Now, I'll share the recipe for you to enjoy!


Ingredients:

  • 2 1/2 cups of flour
  • 1 cup of chocolate chips (semi-sweet, or bittersweet work best)
  • 1 cup of crushed peppermints or candy canes
  • 1 cup of room temperature butter
  • 1 cup of brown sugar
  • 1/2 cup of candy cane pieces. (for the top!)
  • 2/3 cup of granulated sugar
  • 2/3 cup of brown sugar
  • 3/4 cup of cocoa powder
  • 2 large eggs
  • 1 1/4 teaspoon vanilla
  • 1 teaspoon of baking soda
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon salt

Prep time: 15 min

Cook time: 10 min

Total time: 25 min

Get Prepared

First, turn your oven to 350 degrees Fahrenheit or 176.7 degrees Celsius. Now, get your work area prepared; get out your measuring cups and spoons, ingredients, etc. Get out a clean cookie sheet and either line it with parchment paper, or spray it with non stick cooking spray.

Also, you can now crush your candy canes, so you have them ready when needed. For me, it took about 14 small crushed candy canes to make a cup. You will also need about half a cup of crushed candy canes to sprinkle on top for later.

Dry Ingredients

Now that your work station is nice and organized, take a medium sized bowl and mix together your dry ingredients; the flour, baking soda, salt and cocoa powder. Mix your dry ingredients until combined, and set it aside for later!

Mixing Wet Ingredients

Make sure to have a large bowl to do this step.

Using a hand mixer, mix together your butter, brown sugar, and granulated sugar. When that is combined, add in your eggs. Add your eggs in one at a time! Now, add your vanilla and peppermint extract; mix until combined.

Mix Your Wet and Dry Ingredients

Gradually add your flour mixture to your large bowl with the wet ingredients (eggs, butter, and sugar). Again, using your hand mixer, mix the ingredients together until you have a dough like substance. DO NOT OVER MIX! After it's all mixed up, add your crushed candy cane pieces and chocolate chips. Use a spoon to mix this. Trying to using the hand mixer will break your chocolate chips and your dough will get tough, which leads to tough cookies.

Baking the Cookies.

Take a piece of your cookie dough and roll it into a small ball. After you put it on your pan, flatten it a little and sprinkle a little but of your peppermint crunchies on each one. Then once you have that done for each cookie, put them in the oven for 10 min. It differs depending on the heat of your oven, so I ended up having them cook for about 12 min.
