Peanut Butterfly Cookies - Gluten and Dairy Free
This instructable was written by my 10 year old daughter.
I wanted to make this kind of cookie because it's gluten free and I made it for my dad. I like butterflies!

What you need:
Tools:
- Mixer
- Spatula (egg turner)
- Rolling pin
- Butterfly shaped cookie cutter
- Cookie pan
- Measuring cups
- Measuring spoons
- Parchment paper
Ingredients:
- 1 cup Peanut butter
- 42 Unsalted peanut halves
- 1/2 cup + 2 tbsp White sugar
- 1/8 tsp Baking powder
- 1/4 tsp Salt
- 1 Egg
Make the Dough
Preheat the oven to 350 F. Otherwise your cookies will be soggy and gross!
Put ½ cup and 2 tbsp of white sugar into your mixer.
Put in 1 egg.
Then add 1 cup of peanut butter.
Mix on high for 30 seconds.
Scrape the sides of the bowl and then mix it again for 10 seconds.
Add 1/8 tsp baking powder.
Put in ¼ tsp salt.
Mix again on medium speed for 20 seconds.
Creating Butterflies
Form the dough into a ball.
Put the ball of dough onto some parchment paper.
Flatten the dough with the rolling pin until it’s 1/4 inch thick.
If the dough forms cracks while it's flattening, gently pat the dough back together.
Then, cut the cookies with a cookie cutter.
Take the cookies out of the original dough with the egg turner.
Be careful not to wrinkle your cookies with the egg turner. Then they will suddenly be in half!!!
If you mess them up, don't scream, just roll the dough again. Keep rolling the left over dough and cutting butterflies until there’s not enough left to make anymore butterflies.
I got 6 butterflies!
Decorating the Butterflies
Place the 42 peanut halves on top of the cookies to make the body and the wing spots on the butterflies. Press down on the peanuts a little bit so that they don’t fall off the cookies.
I used 3 peanuts for the body, and 4 peanuts for the wings. I used 7 on each butterfly.
Baking the Butterflies
Bake the cookies at 350F for 10 minutes.
Let the cookies cool off in the pan so that they don’t fall apart.
Finally! Eating the Butterflies!
This is the fun part! We get to EAT the cookies! Yay!
