PALEO SUPER BOWL NACHOS
Ingredients
SWEET POTATO CHIPS 4 large sweet potatoes -Dash Himalayan sea salt
SPICY CHIPOTLE CHICKEN 2 organic chicken breasts 1 tsp extra-virgin olive oil 1/4 tsp chili powder 1/4 tsp cayenne pepper 1/4 tsp garlic powder 1/4 tsp onion powder
GUACAMOLE 1 avocado, mashed with a fork 1 small garlic clove, finely diced or grated Juice of ½ lime ¼ teaspoon sea salt black pepper
TOMATO SALSA 2 medium tomatoes, diced, seeds out 2 tablespoons chopped green onion/scallions 2 tablespoon chopped fresh coriander/cilantro ½ teaspoon chilli flakes or cayenne pepper 1-2 tablespoons lime juice 2 tablespoons extra-virgin olive oil ½ teaspoon sea salt
Instructions
SWEET POTATO CHIPS *Preheat oven to 375 and line baking sheet with foil *Slice sweet potatoes thin, using mandolin Spray baking sheet, lay sweet potatoes down, and *bake until crispy. Check often and rotate pan occasionally to evenly bake. Be careful not to burn them.
*Remove, let cool, and place on plate
CHIPOTLE CHICKEN *Cut chicken into bite size pieces *Combine spices and coat chicken with the spice mix *In a skillet, heat oil and add chicken and cook until fully cooked
Top sweet potato chips with the chipotle chicken, guacamole, salsa, scallions, jalapeños, and any other desired toppings
Add cheese for a #primal version or omit chicken for a #vegan version.
