Our Famous Game-day Beef Tacos

Tacos are a family favorite in our household. My dad loves them, my mom loves them, and I love them. So if you want a delicious and easy meal that is easy to clean up and perfect for game day, you came to the right place. This meal is an ensured win for any group of people at any age. Although we will probably not be seeing any sports anytime soon, treat yourself to a little slice of game day with this savory homemade meal that will satisfy even the pickiest eaters that can give you and your family multiple meals-worth of these irresistible tacos.

Supplies

Dry rub:

2 tbsp smoked paprika

1 tbsp paprika

2 tbsp dried oregano

2 tsp allspice

1 tbsp cumin

1 tbsp onion powder

2 tsp ground pepper

2 tsp salt

Beef:

5 lbs chuck roast

1 large onion, chopped

1 cup orange juice (our secret ingredient)

5 cloves minced garlic (more or less depending on your taste)

1/2 cup lime juice

28 oz crushed tomatoes

3 cups low sodium chicken broth

small-sized soft tortillas (corn or flour)

toppings of your choice

olive oil

Beef Preparation

Create your dry rub by combining all your spices together. Then cut the Chuck Roast into approximately 8 pieces. Trim if necessary. Rub the dry rub on all parts of the meat (ensure that it stays on to the meat) and your meat is ready to go!

Browning

Getting browning right is a very important step, it is a very essential part to get the maximum flavor and texture on your tacos. As a Steelers fan, I am not the most qualified for this. When it comes to "Browning", Cleveland natives will outdo anyone else on this step. First, take a very large pot and heat up some olive oil on medium-high. Unless your pot is huge, you will have to brown all parts of the beef separately, that's alright, you just have to brown them in batches instead. When you're done, set the beef aside.

Simmering

Now turn the heat down to medium and add the garlic and onions to the pot and saute for 2-3 minutes. Add your lime juice and orange juice and scrape the bottom of the pot to get any yummy bits in the pot. Then, add the crushed tomatoes and chicken broth and stir. Add the beef back into the pot and simmer for 2-3 hours with the lid on. After that, take the lid off and simmer for an additional 30 minutes. Take the beef out of the pot and shred with 2 spoons (the aroma in your kitchen will be great right about now) and put back into the pot and... you're done!! Set your stove on low and it'll be ready for anyone to get during the game.

Toppings are an essential but flexible part of your tacos, so put on whatever toppings you desire! Some of our recommendations include homemade guacamole, onions, cilantro, limes, and Pico de Gallo (see pictures above). you can also serve it up with some sour cream, hot sauce, or cheese. In addition to that, chips and guac are a great complement to this delicious take on a very popular dish. The bottom line is this taco will taste delicious no matter what topping you put on it.
