Onion Bun Bundle
Too bad you can't smell it.... hmmmmmm. Heavenly, seriously!
I absolutely LOVE onion bread!
It is the best bread for BBQs but it is also sensational for sandwiches. You could bake it as one loaf, if you prefered, but buns are so much more fun. Just tear off a bun, butter it and bite right in.

This Is What You Need:
- 4 cups of wheat flour
- 1 tablespoon of dried yeast
- 1 1/4 cups of handwarm water
- 1 teaspoon of brown sugar
- 2 teaspoons of salt
- 2 tablespoons of olive oil
- 1 cup of danish roasted onions (you can quite easily make homemade roasted onions, but I prefer the ready-made ones from Denmark.)
Aparently it seems to be a challenge to get the onions in a store in some places. You could make them yourselves following the instructable below. I would cut the onions differently though. I would cut them in half and then slice them quite thinly.

I have never had any problems with yeast, I think you just need to treat it right. Feed it with a bit of sugar, knead it thoroughly, let it rest in warm areas and nothing can go wrong.

First you stir the sugar into the lukewarm water and let it desolve a bit (stir for 20 seconds that should be enough). Stir in the dried yeast and stir for a bit until the yeast is desolved and the water is light brown. Set aside.

Preheat the oven to 110 F (45 C). Make a little depression in the flour. Pour the olive oil into it, sprinkle the salt on top and pour the yeast water in it. Knead. When the dough feels silky pour the dried onions on top, knead into the dough. The kneading should take about 5 min. Not much longer. Make a ball, sprinkle some flour on top. Put a kitchen towel over the bowl and put it into the oven. Let rise until the volume has doubled (about 30 min).
Take the bowl out of the oven and preheat the oven to 480 F (250 C). Knead the dough once more and then divide into 9 pieces. Make mini balls and arrange them around one centre ball. Brush water onto the balls. Put the bowl on top and let rise for another 15 min. Lift the bowl off, sprinkle the buns with flour.
As soon as the oven is hot enough put the bun bundle in. Bake for 15 minutes. Diminish the temerature to 390 F (200 C). Continue baking for 10 minutes. Open the oven door a tiny bit and bake for another 5 minutes.
By this time the members of your household will have assembled.

PS: you can tell if the buns are properly cooked by knocking on them. If it sounds hollow when you knock, they are done.
