One Dish Taco Dip

This is a one dish taco dip that can serve as a meal on its own or a great appetizer/side dish to serve at a party. Easy and quick to make, taco dip reheats well. My husband and I make it as one of those big meals for a couple of days so we aren't worrying about cooking throughout the week.

Often I will make my own taco seasoning, but today realized I was lacking a few ingredients and so I used taco seasoning packets we had on hand.

Supplies

1-1.5 lbs ground meat

1 packet taco seasoning

1-2 bell peppers

1-2 jalapeno

1 tomato

1-2 green onions

1/2 can sliced black olives

1 can refried beans

1 cup shredded cheese

Toppings

Guacamole

Sour cream

Salsa

1-2 bags of tortilla chips

In a large pan, cook the ground meat over medium-high heat until browned. Drain off excess liquid and then add your taco seasonings and let simmer until thick. Pictured is about 2.5lbs of ground turkey, I used 2 packets of Old El Paso seasoning and 1.5 cups of water as specified by the package instructions.

While the meat cooked, I prep the vegetables. Dicing all tomatoes, peppers, onions, mushrooms, and jalapeno. I also drained the liquid from the beans and the olives.

Layer

The first layer is usually refried beans but this time I was using black beans, so the first layer was the ground meat (split between two different dishes).

Then I layered the beans, mushrooms, peppers, and tomato. Then I added the shredded cheese, green onions, sliced jalapenos and black olives.

Bake

Bake at 400 for 20-30 minutes, until the cheese is lightly browned.

Serve with tortilla chips, salsa, sour cream, and/or guacamole.
