Nerds Cake

If you're looking for a way to brighten your day during quarantine, try baking this Nerds cake! The colorful, sweet and sour candy pieces will give you a boost of cheer in these uncertain days. This cake was served in the dining halls of my college, and I would always try to eat a piece before exams for good luck. So if you too have switched to online schooling, try this cake to give you some smarts before going in to your next exam (not that you need it!)

Supplies

To make Nerds Cake, you will need:

1 package white cake mix + ingredients listed on box (my mix called for 1/3 cup oil and 3 egg whites)

1 16oz container vanilla frosting

2 5oz (theatre size) boxes Nerds candy (approximately 1/2-3/4 cups)

Cooking spray

Large mixing bowl

9x13 inch pan

Whisk

Spatula

1/2 cup measuring cup

Offset spatula

Prepare Cake Mix & Add Nerds

Start by preparing your cake mix according to package directions. After the cake batter is made, add in the Nerds. I used 1 theatre size box, which equaled 1 cup. Use a spatula to fold the Nerds into the batter.

Prepare Pan, Pour in Mix, and Bake

Spray the pan with non-stick spray. Pour in the batter. Bake in the oven according to the directions on your cake mix. I baked mine for 25 minutes at 325, but times and temperatures will vary based on your oven and the box directions.

Remove From Oven and Allow to Cool

Once your cake is done baking, take it out of the oven and allow it to cool completely before moving on to the next step. It is important to allow the cake to cool so that it will be easier to spread the frosting.

Frost and Sprinkle With More Nerds

Use the offset spatula (or a regular spatula or a knife) to frost the cake. Sprinkle more Nerds candy on top. I only used about 1/4 cup for topping, but feel free to use as much or as little as you like!
