My Love for Chicken Is Real: Chicken Chopper Rice With Gravy

Today's recipe is an Indo-Chinese Main course that I absolutely love making and eating. Chicken Chopper Rice is a combination of Chicken fried Rice and Chicken gravy and it is a super famous street food here in Mumbai. It is also called chicken combination rice. Chicken chopper rice is very yummy and absolutely easy to make. With a few ingredients, you can make this amazing dish instantly. It is called chicken chopper rice because all the ingredients used in the recipe are finely chopped. This recipe is a proper street-side recipe. So it's going to be super delicious. This dish definitely wins hearts. So, without any further ado, Let's start with the recipe.
Supplies
- Rice
- Chicken
- Eggs
- Onion
- Ginger
- Garlic
- Green chili
- Spring onion
- Cabbage
- Carrot
- Capsicum
- French Beans
- Salt
- Pepper
- Red Chili Powder
- White vinegar
- Soy Sauce
- Red Chili Sauce
- Green Chili Sauce
- Schezwan Sauce
- Corn Flour
- All-purpose flour
- Orange food color (Optional)
Soak Rice
- Take 1 cup of Long grain Basmati rice. You can take any long grain rice.
- Wash it 2-3 times with water.
- Soak it in water for 30-40 minutes.
Cook Rice
- Heat water in a pot.
- Add 1 teaspoon of salt and 1 tablespoon of oil.
- Let the water come to a boil.
- Add in the soaked rice.
- Cover and cook the rice for 5-7 minutes.
- Don't overcook the rice. Cook till it's 80-90% cooked.
- Once done, Turn off the flame.
- Strain the rice.
- Keep it aside to cool it.
Chopp Veggies
Finely chop the following vegetables:
- Cabbage (100-150 grams)
- Carrot (1 medium-sized)
- Capsicum (1 small-sized)
- Onion (1 medium size)
- French Beans (100 grams)
- Garlic (12-15 cloves)
- Ginger (20 grams)
- Green chilies (2-3)
We are going to use half of all these veggies for the rice and half for the gravy.
Chop Chicken
- Take boneless chicken. Wash it well.
- I have taken boneless chicken breasts. (300-350grams)
- Chop it into 1-inch pieces. Refer to the picture.
Marinate Chicken
In a mixing bowl, add the following ingredients to the chopped chicken:
- Egg -1
- Soy Sauce (1 tablespoon)
- White vinegar (1/2 tablespoon)
- Salt (as per taste)
- Black pepper powder (1/2 teaspoon)
- Red chili Powder (1/2 teaspoon)
- All-purpose flour (2-3 tablespoons)
- Orange food color (A pinch)
Mix everything well. Keep it aside for 5-15 mins.
Fry Chicken
- Heat oil in a pan for deep frying.
- Once the oil is hot, add the chicken chunks one by one.
- Deep fry them till they're fully cooked. (This would take about 4-5 minutes)
- Strain the excess oil with tissue paper.
Make Scrambled Eggs
- Take 3 eggs in a bowl.
- Add 1 teaspoon of salt.
- Whisk the eggs with the salt. (You can also add black pepper powder if you want.)
- Heat a pan.
- Add 2 tablespoons of oil.
- Add in the whisked eggs.
- Keep mixing and scramble the eggs.
- Once done, remove it on a plate.
Chopper Rice
- Take a Chinese wok or any deep pan (Kadhai).
- Heat 3-4 tablespoons of oil.
- Add Green chilies.
- Let it sputter.
- Add in the chopped garlic and chopped ginger. (Save half for the gravy.)
- Saute' it for a few seconds.
- Let the garlicky flavor get into the oil.
Add Chopped Veggies
- Add the rest of the veggies (Onion, Cabbage, Carrot, french beans, Capsicum, Spring onion greens). Save half for the gravy.
- Cook it for a minute.
- Add 1/2 teaspoon of salt (As per taste).
- Add 1/2 black pepper powder.
- Mix it well.
- Cook for another 20-40 seconds.
Sauces
- Add 1 tablespoon of Soy sauce.
- Add 1 tablespoon of green chili sauce.
- Add 1 teaspoon of white vinegar.
- Mix everything well.
- Cook the veggies with the sauce for 1-2 minutes.
Add in the Rice
- Add the cooked rice.
- Mix it well with the veggies and sauces.
- Cook it on high flame for 1-2 minutes.
Add Fried Chicken and Scrambled Eggs
- Chop 1/3rd of the fried chicken and add it to the rice.
- Add half of the scrambled eggs.
- Mix it well with the rice.
- The Chopper rice is ready.
Time for Some Gravy
- Take another pan.
- Add 2-3 tablespoons of oil.
- Heat it.
- Add the rest of the chopped green chilies, Garlic, and ginger.
- Saute it for a minute till the raw smell goes away.
Add Chopped Veggies
- Add the rest of the veggies one by one.
- Cook it for 1-2 minutes.
- Add 1/2 teaspoon of salt.
- Add 1/2 teaspoon of black pepper powder.
- Mix it well.
- Cook it for another 30-40 seconds.
Add Scrambled Eggs
- Add the rest of the scrambled eggs.
- Mix it well.
Seasonings
- Add 1 tablespoon of soy sauce.
- Add 1/2 tablespoon of white vinegar.
- Add 1 tablespoon of green chili sauce. You can use red chili sauce instead.
- Add 2-3 tablespoons of schezwan sauce.
- Mix everything well.
- Cook the veggies with the sauces for 1-2 minutes.
Water
- Add 1 1/2 cups of water.
- Let it come to a boil.
Slurry
- Make a slurry. (Take 1 tablespoon of corn flour, Mix it with 1/4th cup of water.)
- Add the slurry to the gravy.
- Mix it well.
- Make sure there are no lumps.
- Let the gravy thicken.
Gravy Is Ready
- Once the gravy is thick, turn off the flame.
- Add in the fried chicken.
- Mix it well with the gravy.
- Garnish it with some spring onion greens.
The gravy is absolutely ready
Bring It Together
Our Chicken Chopper rice is absolutely ready. It looks lovely and smells delicious.
