Mojo Chickpea Salad

I came across a chickpea salad recipe recently, but lacked some of the ingredients listed, so I made do with what I had on hand. And if you have mojo marinade on hand, you have just a winning ingredient for a lot of things, including an awesome chick pea salad!

Mojo marinade usually consists of olive oil and vinegar, or citrus juices like orange, lemon or lime juice, with some other spices, usually cumin or coriander. And it's a terrific complement to this light and refreshing summer salad.

Ingredients

You'll need:

  • Chickpeas (aka garbanzo beans) - 1 can
  • Parsley (preferably fresh) - about 1/8 cup chopped
  • Onion -1/2 to 1/4 onion, chopped
  • Garlic - 1 clove chopped
  • Extra Virgin Olive Oil

  • Tahini (sesame seed paste)

Blend Dressing

The first thing you'll probably need to do is it to stir your tahini well, since it tends to separate. Stir until smooth and then add to about an 1/8 cup tahini,

  • a couple tablespoons of mojo marinade
  • 1 tablespoon of EVOO

and blend.

Drain and Wash Chick Peas

Dump your can of peas into a colander and rinse well.

Add Tahini Dressing

Pour your rinsed peas into a mixing bowl, and add your tahini dressing to your chickpeas.

Add Parsley, Onion and Garlic

Add in your freshly chopped herbs and spices.

Blend Well

Mix gently but thoroughly until everything in thoroughly mixed and coated.

Serve and Enjoy!

You can cover and chill your chickpea salad and serve it cold, or serve it at room temperature. It's delicious either way, and goes well paired with just about anything or all by itself!
