Mexican Delight: Chilaquiles
This is a traditional mexican dish. It’s usually eaten for breakfast but it goes great at any other meal. This recipe serves 4 large portions.
Ingredients
¼ white onion
800 grams of tomatoes
5 branches of cilantro
¾ cups of water
210 grams of tomato sauce
1 teaspoon of powdered chicken bouillon
½ teaspoon of salt
1 tablespoon of oil
Fried tortilla or totopos
For serving:
Avocado
Egg
Sour cream
Prepare Tomatoes
Cut out the hard part of the tomatoes and cut them in half to fit in the blender.
Place the tomatoes, onion and cilantro (previously washed) in the blender.
Blend
Add the water and blend everything together.
Place the oil in a hot cooking pot and pour the mixture in it.
Add the tomatoe sauce, the powdered chicken bouillon and mix.
Totopos
Let it boil for 8 minutes.
When the mixture is still very hot grab a handful of fried tortilla (totopos) and put it in the sauce. Let it sit for 1 minute and serve right away.
Enjoy!
You can use some sour cream, avocado and a sunny side up egg. Some people prefer to eat the chilaquiles with chicken or meat. Try different combinations and find your favourite!
