Make Mint Vanilla Cupcakes

Hi! I had this idea..... I was reading a cupcake recipie book, and I wanted to make yummy cupcakes. I was reading about surprise cupcakes that you put a caramel or Hershey kiss inside and bake it like that. I was planning on making these cupcakes for someone who likes mint a lot. So I thought that I could make these with York mints. I had a few more ideas, and it took a while but I created a quick and easy recipe for you all. Enjoy!

Supplies

You will need a vanilla cake mix, vanilla frosting, a package of York mints (a standard bag had exactly enough for my cake mix), cupcake liners and pans, whatever your cake mix calls for, green food dye, and peppermint extract

The Cake!

Make the cake mix according to instructions.... Pretty straight forward

Pouring the Batter

You'll want to line your cupcake trays. Usually, you fill a cupcake liner 3/4 of the way up, because of rising. So right now, just fill each liner 1/4 of the way up. I accidentally put them too high and they didn't cook properly. Once they have a little batter in them, place one unwrapped York mint on top of each batter liner. Don't push it in, because it won't cook right. After that, fill the liners up the rest of the way, which isn't shown in the picture (sorry about that). After this you should be ready..... Put it in the oven according to the directions on the back of the box! ;)

FROSTING!!!!!

Yummy! The best part... So open a canned vanilla frosting (funfetti was all I had, so I just threw away the sprinkles on top). I suggest to first put in a drop or two of green food coloring. You can make it a really light green, or it can be vibrant. It's really up to you. As you can see, I made mine pretty light.

The Tricky Part of the Frosting

This is the hardest part... You'll want to make your frosting how minty you want it. Add tiny drops of peppermint extract and sample until you get the mintiness you want. I really advise TINY TINY drops! A little goes a long way. This stuff is really strong. And you don't want it really minty. It should just be a little. In total, I used a little less than 1/8 of a teaspoon. Don't try pouring in straight from the bottle either. Use the smallest spoon on your measuring spoons and add it very sparingly. It seemed like I added nothing and it was perfect

When your cupcakes are done and cool, you can frost them. Be sure to save enough frosting for every cupcake. Then you're done! Enjoy your deliciously minty vanilla cupcakes
