Mac and Cheese With Brie

Supplies
- ½ cup butter cubes
- 3 cups milk
- ¼ cup flour
- 3 ½ cups macaroni shells
- 2 ½ oz hard cheese freshly grated (don't use store-bought pre-grated)
- 1 ⅖ cups Brie cheese, chopped, with skin on
- 1/2 tsp salt
- ½ tsp ground black pepper
- 1 tsp ground thyme
- 1 tsp ground paprika
- 1/2 onion chopped
- 2 garlic cloves minced
- 2 slices crispbread
- 1 tbsp Dried red pepper flakes optional, for topping
- 1/2 tsp Dried chives optional, for topping
- 1 7 x 10 inch baking dish
- 2 large pots
- ladle

Cook the Pasta
Bring large pot with salted water to boil. Put dried macaroni in the water and cook them al dente (2-3 minutes less than instructed on the package). Drain, but leave a ladle of pasta water aside - you will need it later.
Make the Cheese Sauce
Melt butter in a clean heavy bottom pot. Whisk in flour.
Add chopped onion and garlic.
Whisk in milk.
Add Brie and grated cheese.
Add spices.
Add a ladle of reserved pasta water in the sauce. Mix and cook 4 minutes.
Combine Pasta With the Sauce
Remove the pot from heat.
Add cooked pasta in the cheese sauce.
Bake and Serve
Make crumbs from crispbread, using mortar and pestle or food processor.
Transfer pasta with sauce to the baking dish.
Sprinkle dried pepper flakes and breadcrumbs on top.
Preheat oven to 350 F. Bake 15 minutes until bubbly and crispy on top.
Let it cool a little and sprinkle with chives before serving. Enjoy!
